A lot of the time, lunch looks like this for J…and sometimes for me, too!

He is 3 now and really enjoys child friendly charcuteries, lol!

A little nitrate-free turkey pepperoni, cheese wheel, mini sweet peppers, clementine, pickled okra, nuts, whole wheat crackers and half of a chocolate chip cookie.

Can’t go wrong with it for him and it’s easy to grab and eat at home or on the go! Plus it’s easy to switch up with different meats, cheeses, vegetables, fruits and starches!

Working on perfecting the chocolate chip cookie. 🤩 This one is definitely up there!

Breakfast for dinner, two ways. I used most of the same ingredients to make these two different dinners while incorporating the colors of the rainbow with our fruits and vegetables!

Breakfast nachos one night and omelets the other, with deconstructed versions for J, and fruit on the side, as always!

Chicken sausage, eggs, peppers, tomatoes, spinach, cheese, strawberries, blackberries, blueberries, tortilla chips and tater tots. Yum!

The other night I grilled some lemon-pepper turkey tenderloins, red bell pepper, zucchini, squash and asparagus and served it on top of quinoa. I added a splash of lemon, pickled okra and cheese for extra flavor.

It was really good and I especially loved the grilled turkey tenderloins! I think I’m going to add that into our protein rotation more often!

I present to you what the meals in our house look like nowadays: the full meal for and I, with a deconstructed version for our toddler, lol!

This was a delicious tostada topped with refried black beans, ground turkey and allllll the veggies, with some plain yogurt and salsa on top. My random little side dish was a mixture of corn and pickled okra.

Jenson is normally into most of the food we eat, as long as it isn’t all mixed together so it makes it pretty easy to make his plate along with ours.

This one was a winner all around, especially the pickled okra 😂

I’m currently working on getting my yoga certification and I can tell somebody has been paying attention 😂🥰

Living a balanced life means no crash dieting, no restrictions and no extreme exercise routines. What it does mean is including more food explorations, enjoying everything in moderation, finding a type of exercise that you enjoy and discovering what works for you in all dimensions of wellness. I encourage everyone to get outside and create their own adventures, whether it is gardening or running a trail race. Take charge of your health, take charge of your life.
