Keep it SIMPLE!!

So often I think we over complicate things!

Pick a protein, pick a healthy fat and pick 2 veggies!!

My dinner tonight on my egg fast

For more recipes give Carb Conscious Keto a follow! Lots of great recipes!

Keto fettuccine Alfredo with egg noodles

2 eggs
1 oz cream cheese
pinch of salt
pinch of garlic powder
1/8 teaspoon black pepper
1 oz Mascarpone cheese
1 tablespoon grated parmesan cheese
1 tablespoon butter

Instructions

Blend the eggs, cream cheese, salt, garlic powder, and pepper in a magic bullet or blender.
Pour into a butter-greased 8 x 8 pan.

Bake at 325 degrees Fahrenheit for 8 minutes or until just set.
Remove and let cool for about 5 minutes.

Using a spatula, gently release the sheet of “pasta” from the pan.

Roll it up and slice with a sharp knife into 1/8 inch thick slices.

Gently unroll and set aside.

Combine the mascarpone, parmesan cheese, and butter in a small bowl.

Microwave on high for 30 seconds.
Whisk.

Microwave on high another 30 seconds.

Whisk again until smooth (this may take a minute because the sauce will have separated – keep whisking and it will come back together!)

Add the pasta to the hot sauce and toss gently.
Serve immediately with more freshly ground black pepper if desired.

Tonight's egg fast dinner 😋 they were actually really good. I was surprised 😯

Keto Mini Egg Fast Pizzas

Ingredients
2 oz. cream cheese, room temperature
4 tbsp mayonnaise
4 eggs
2 oz Parmesan cheese, freshly grated
2 t. dried basil
2 t. dried oregano
1 t. garlic powder
1 t. onion powder
Sea salt and black pepper, to taste
Sriacha sauce for garnish

Instructions
Preheat oven to 375° F and grease or spray a non stick muffin top pan. Set aside.
Combine cream cheese, eggs and mayonnaise in a medium bowl with salt and black pepper, to taste, and whisk until mixture is completely blended and smooth.
Divide the mixture into the 6 muffin top cups.
Sprinkle the parmesan cheese evenly divided over the mini pizzas.
Sprinkle each pizza with the seasonings and garlic and onion powder.
Drizzle each pizza with a swirl of Sriracha.
Place the pan in the pre-heated oven for 8-10 minutes, or until slightly puffed and golden brown. They will look puffy like muffins and then deflate as soon as you take them out of the oven.
Grab yours fast because these smell amazing and people will come take them!

I used a regular muffin pan and decreased the temp to 350 and cooked longer. I also used pepper jack cheese instead of parmesan cheese

My dinner tonight keto mini meatloaf 2 have sugar free catch-up and other 2 sugar free BBQ sauce I wanted to try it out! Pretty good, sided with cauliflower mash and green beans. Definitely get more meatballs then meat loaf but still good.

1 lb 80/20 Ground Beef
1 Cup Chopped Onion
1 Egg
1 Cup Pork Panko, Bread crumbs substitute
1/4 Tsp Onion Powder
1/4 Tsp Garlic Powder
1/4 Tsp Italian Seasoning
1/4 Tsp Salt
1/4 Tsp Black pepper
5 1/2 Tablespoons sugar free ketchup

INSTRUCTIONS
Preheat oven to 350 F and grease a muffin pan
In a bowl combine ground beef, chopped onion, egg, pork panko, onion powder, garlic powder, Italian seasoning, salt, pepper and knead together until well combined.
Shape 1/4 cup of mixture into a puck shape and place it into the muffin pan. Should make 12 mini meatloaves
Top each mini meatloaf with 1/2 tablespoon of sugar free Ketchup
Bake for about 30 to 40 minutes.

NOTES
Me personally I felt baking in a muffin pan was lot of grease, I took them out of the pan in the end and put on a sheet pan and finished cooking. Kinda dried up all that grease. Might have also been the ground beef I used.

KETO FETA BURGERS WITH TOMATO CREAM SAUCE

This creamy Keto Feta Burgers With Tomato Cream Sauce is a flavorful low carb dinner that’s perfect for just about any night of the week!

Servings: 7 (2 mini burgers with sauce)
Net Carbs: 3 net carbs per serving

Ingredients

2 lbs Ground beef
4 oz feta Cheese
1 Egg
2 tbsp Fresh chopped basil
2 tsp Minced Garlic
2 tbsp Beef stock
1 cup Heavy whipping cream
1 tsp Italian seasoning
1/4 cup Chopped green onions
2 tbsp Tomato paste
Salt and pepper to taste

Instructions
In a large mixing bowl, combine the ground beef, egg, feta cheese, chopped basil, minced garlic as well as salt and pepper to taste. Mix with hands until well blended.

2. Form the meat mixture into 14 equal-sized patties.

Heat a large skillet over medium-high heat, and cook the patties until they reach your desired level of doneness. You may have to cook the patties in two or more batches depending on the size of your skillet.

Remove the patties from the skillet and set aside. Drain the extra grease out of the pan.

Lower the temperature to medium. Place 2 tbsp of beef stock into the pan to deglaze it. Scrape the bits off the bottom of the pan.

Whisk in 1 cup of heavy whipping cream, 1 tsp of Italian seasoning, ¼ cup chopped green onions and 2 tbsp of tomato paste. Mix until well combined.

Add in salt and pepper to taste, and cook the sauce down until it has thickened.

Place the patties back into the skillet, and toss to coat in the sauce.

Serve with more freshly chopped green onions as garnish if desired.

My last of my stuffed chicken breast with salad and this keto bread I made.

Easy Keto bread recipe

INGREDIENTS
BASIC INGREDIENTS
1 cup Wholesome Yum Blanched Almond Flour
1/4 cup Wholesome Yum Coconut Flour
2 tsp Baking powder
1/4 tsp Sea salt
1/3 cup Unsalted butter (or 5 tbsp + 1 tsp; measured solid, then melted; can use coconut oil for dairy-free)
12 large Egg whites (~1 1/2 cups, at room temperature) egg whites from carton are fine but will need cream of tartar

OPTIONAL INGREDIENTS (RECOMMENDED)
1 1/2 tbsp Besti Erythritol (can use any sweetener or omit)
1/4 tsp Xanthan gum (for texture - omit for paleo)
1/4 tsp Cream of tartar (to more easily whip egg whites)

INSTRUCTIONS
Preheat the oven to 325 degrees F (163 degrees C). Line an 8 1/2 x 4 1/2 in (22x11 cm) loaf pan with parchment paper, with extra hanging over the sides for easy removal later.

Combine the almond flour, coconut flour, baking powder, erythritol, xanthan gum, and sea salt in a large food processor. Pulse until combined.

Add the melted butter. Pulse, scraping down the sides as needed, until crumbly.

In a very large bowl, use a hand mixer to beat the egg whites and cream of tartar (if using), until stiff peaks form. Make sure the bowl is large enough because the whites will expand a lot.

Add 1/2 of the stiff egg whites to the food processor. Pulse a few times until just combined. Do not over-mix!

Carefully transfer the mixture from the food processor into the bowl with the egg whites, and gently fold until no streaks remain. Do not stir. Fold gently to keep the mixture as fluffy as possible.

Transfer the batter to the lined loaf pan and smooth the top. Push the batter toward the center a bit to round the top.

Bake for about 40 minutes, until the top is golden brown. Tent the top with aluminum foil and bake for another 30-45 minutes, until the top is firm and does not make a squishy sound when pressed. The internal temperature should be 200 degrees. Cool completely before removing from the pan and slicing.

Serving size: 1 slice, 1/2" thick

Lunch today is tuna patties and keto coleslaw

What I used:
1 can of Tuna
1 tablespoon of mayo
1 egg
2 tablespoons of Grated Parm cheese
Italian seasoning
Salt and pepper

Sauce on the top is just 1T of mayo and 2T of dill relish

This is how I make my coleslaw

I use one bag of coleslaw mix
1 cup Mayo
2 teaspoons of apple cider vinegar
1 TBSP white vinegar
1 TBSP keto friendly sugar I use monk fruit
Salt and pepper to taste

I mix my ingredients for the dressing and a separate bowl first and whisk it to get it creamy and there's no chunks left with the Mayo I then pour over my coleslaw mix and mix it really well I recommend putting it in the fridge for at least 2 hours so that way the moisture can mix with the dressing and it makes it taste better but you can totally eat it right away also lol
