Croque Madame goes KETO! 😍
Yes you heard us right! This sandwich stars layers of thinly sliced ham, soft, melty cheese under a cottage cheese egg pancake.
Keto Croque Madame
Serving Size: 2
Ingredients:
Pancake
1 cup cottage cheese
4 eggs
1 tbsp psyllium husk powder
4 tbsp butter
Toppings
3.5 oz deli ham
3.5 oz gouda slices
2 oz shredded cheddar
1 medium red onion, chopped
2 eggs
Fresh herbs, optional
Few tomato slices, optional
Instructions:
Pancakes
1. In a bowl, whisk together egg, cottage cheese and psyllium husk powder.
2. place a nonstick pan over medium-low heat and spray with cooking oil.
3. Pour egg mixture and cook for 1-2 minutes on each side or until set.
4. Remove from pan and set aside.
Toppings
1. Return pan over medium heat and spray with cooking oil.
2. Fry egg to desired liking. Optional to cook egg in a pancake ring for a nice round shape.
3. Assemble sandwich with ham, gouda, cheddar cheese, tomato, fried egg and red onion.
