Mushroom Potato Curry
4oz lion's mane mushroom
2 medium potatoes
Basmati rice
2 cloves
Vegetable broth
Jalapeño pepper
Anise and cinnamon stick
Red bell pepper slices
Tomato paste
4 medium tomatoes
1c coconut cream
Parsley
Spices: curry powder, turmeric, coriander, garam masala, paprika, salt & pepper.
1. Soak rice. Dice potatoes and mushrooms. Add to skillet with oil and saute for 5-8 minutes. Set aside.
2. Saute onions, anise flower, and cinnamon stick.
3. Add spices. Add tomato paste and stir for 2 minutes.
4. Add diced tomatoes. Cook for 15 minutes on medium heat.
5. Allow tomato mix to cool. Add to blender with coconut cream. Return to pan. Add mushrooms and potatoes. Simmer for 5 minutes.
6. Add rinsed rice to a pot with the broth. Add cloves and dash of salt. Boil for 4 mins, then cover and simmer until water has absorbed.
7. Garnish curry with the red peppers and parsley
