Another hodgepodge, what the heck am I going to eat for lunch creation. Leftover rice and chicken from last night. I added 3 strawberries, cottage cheese and an avocado. I encourage you to get creative with what’s available. Think color, food groups and then just go with it. This plate has protein from the meat and cottage cheese, carbs and fiber from the fruit and rice and heart healthy fat and fiber from the avocado. I’ll make up for the veggies later. I wasn’t feelin’ the baby carrots or broccoli that I have. Have fun and enjoy food!!
