Loaded Cottage Cheese Salad 🥣✨
Ohhh this is SUCH a delicious high-protein, low-effort meal 🤌 Creamy, crunchy, salty, and fresh all together in one bowl. It’s simple but tastes amazing!

🛒 Ingredients
2 cups cottage cheese
½ cup cooked bacon, chopped or crumbled
½ cup shredded cheddar cheese
½ cup sweet peas (thawed if frozen)
2–3 green onions, thinly sliced

Optional (but highly recommended 😉)
1–2 tbsp sour cream or Greek yogurt (for extra creaminess)
½ tsp garlic powder
½ tsp onion powder
Salt and black pepper to taste
A little ranch seasoning or a splash of lemon juice for extra flavor

🥄 Instructions
1️⃣ Prepare the ingredients
Cook and crumble the bacon. Slice the green onions. If using frozen peas, thaw and drain them properly.

2️⃣ Start with the base
Take a medium bowl and add the cottage cheese.

3️⃣ Make it loaded
Add:
• Bacon
• Shredded cheddar
• Peas
• Green onions

4️⃣ Season it well
Add garlic powder, onion powder, salt, and black pepper. Mix everything together nicely.
Taste it and adjust seasoning if needed. A little ranch seasoning tastes amazing 🔥

5️⃣ Chill (optional but better)
Refrigerate for 30–60 minutes so the flavors blend together perfectly.

🍽 How to Serve
• Eat it directly with a spoon
• Scoop it with crackers or pita chips
• Fill it in a wrap or sandwich
• Serve it over fresh greens for a protein-rich salad

Cucumber and Tomato Salad 🥗 Comment "RECIPE" for one of my favorite summer salads!
1 long English cucumber, rinsed (approximately 2 cups or 320 grams)
12 ounces cherry/grape tomatoes, halved (any color or variety) (approximately 2 cups or 340 grams)
½ of a small red onion, thinly sliced (approximately 1⁄2 cup or around 70 grams)
2 tablespoons fresh basil, torn or sliced (approximately 20 large basil leaves or 6 grams)
3 tablespoons olive oil, 38 grams
2 tablespoons balsamic vinegar or lemon juice, 36 grams*
½ teaspoon sugar, optional (1 gram)
1 ½ teaspoon Italian seasoning, optional (1.5 grams)
½ teaspoon Salt, 3 grams
½ teaspoon black pepper or red pepper flakes, 1 gram
⅔ cup crumbled vegan feta, optional* (approximately 67 grams)

🚀 Superfood Energy Bites—straight from one of our students!

Monica tried a treat at a local juice bar, loved it, and said, “I can make a healthier version at home.” A few spins in the food processor later, these power-packed bites were born: sweet, chewy, protein-rich, and loaded with good fats and minerals. Perfect for lunchboxes, post-workout munching, or that mid-afternoon slump.

Nut & Fruit Balls by Monica L.

Ingredients
½ cup almond butter
1 ½ cups raisins
14 Medjool dates
½ cup h**p seeds
½ cup sunflower seeds
½ cup goji berries
½ cup shredded coconut
½ cup chia seeds
½ cup pumpkin seeds

Directions
Add all ingredients to a food processor.
Pulse until the mixture is soft, sticks together, and can be rolled.
Use a small cookie scoop to form bite-size balls.
Refrigerate and enjoy!

Looking for a healthy bread to jump start your year? Here's a delicious, healthy recipe our graduate, Angella Mendenall, MH tailored from Katri Nordbloom's alkaline cooking. Enjoy!

Buckwheat Bread

Ingredients
3 cups raw buckwheat flour - I blend it into flour in my Vitamix then put flour in a bowl.
Blend 4 carrots (medium to large) with 3 cups water, and a half of onion.
Place blended water, carrots, and onion into bowl with buckwheat flour.
Add: 2 tsp salt, 1/2 onion, 1 tablespoon Costco no salt organic seasoning
Oil a pan well
Bake at 375 degrees for 30 min
Salt the top of the dough very lightly after it is in the pan for an added little kick of taste.
This recipe makes two 9x9 pans. Cut recipe in half for smaller batches


Variations

I add fresh herbs like:
1 tablespoon rosemary fresh (or thyme, marjoram)
1 tablespoon Italian seasoning
Topped with dried parsley

You can add beets to the base instead of carrots, or turnips, parsnips, any kind of onion or garlic for a change of taste or added flavor.

Mexican style: add jalapeños, or green chilies, small amount of beans, oregano, and chili powder

Sweet and savory: add a little honey, or pure maple syrup, raisins or any dried fruit or nuts of choice, cinnamon, clove, cardamom, or pumpkin spice.

Molasses for a darker and richer bread. With spices, ginger, cloves, and cinnamon.

More hints:
Freeze extras to use later

Make homemade croutons out of leftover buckwheat bread. Add olive oil and herbs and spices. Toss and bake.
