I LOVE this cake! 😍

✨ Lemon Olive Oil Cake with Rosemary✨
This citrusy cake won our recipe contest back when the Plant Paradox Cookbook came out (shout out Nicola Moores 🏆) and it’s easy to see why — rich, moist, and topped with a zesty rosemary syrup. Save-worthy and crowd-pleasing! 💛🌿

🛒 Ingredients
Cake:
• Olive oil spray
• 1½ cups blanched almond flour or sorghum flour
• Zest of 1 orange
• 2 tbsp rosemary leaves, roughly chopped
• 1 cup allulose
• 2 tsp baking powder
• Zest of 1 lemon
• Juice of 1 lemon
• ⅔ cup extra-virgin olive oil
• 4 eggs, beaten

Rosemary Syrup:
• ½ cup water
• Juice of 2 lemons
• 3- 4 tbsp allulose or allulose syrup
• 2 sprigs rosemary

To Garnish:
• Fresh rosemary sprigs
• Goat’s milk yogurt or whipped heavy cream

👩‍🍳 Instructions
1️⃣ Preheat: Grease an 8” springform pan with olive oil.
2️⃣ Blend: In a food processor, pulse flour, orange zest & rosemary until fine.
3️⃣ Mix: In a bowl, stir in allulose, baking powder, lemon zest. Add lemon juice, olive oil & eggs.
4️⃣ Bake: Pour into pan. Place in cold oven → set to 350°F. Bake 40 min.
5️⃣ Cool: Let rest in pan 5–10 min.
6️⃣ Make Syrup: Simmer all syrup ingredients until allulose dissolves. Gently boil 5 min. Remove rosemary.
7️⃣ Soak: Poke cake with skewer & pour syrup over warm cake.
8️⃣ Garnish: Top with rosemary + goat’s milk yogurt. Enjoy!
