Today's the last day of baking camp! Campers started off by arranging measurements from smallest to largest without looking at the equipment, a task most couldn't do at the beginning of the week! We love seeing how far they've come and how much fun they've had. You too can have fun in an upcoming cooking class! 🙌 There are only two spots available in each of our next two classes: Lumpia on July 26th and Thai at Home on August 9th. Well if this isn't a perfect week for Smoky Gazpacho, we don't know what is! All you have to do is thaw, stir, and enjoy- no heating required! Packed with local tomatoes, cucumbers, and summer squash, it also has the nicest little kick from smoky chipotle peppers. So refreshing & so delicious!

Summer flavors have arrived at RCK! We're snatching up seasonal veggies as they become available and using them in scrumptious dishes like this Tomato & Pesto Pasta Bake (cherry tomatoes, basil, and baby spinach courtesy of the fine folks Jericho Settlers Farm). Our Baked Chicken Penne is also hitting shelves today, packed with roasted chicken, sundried tomatoes, Jericho Settlers Farm spinach, and mushrooms in a luscious cheesy sauce. Sound good, don't they?

Eight years later on that exact date, we were living our cooking class dream come true with Ethiopian and Eritrean Cuisine of Vermont and community members having a blast together! It's fantastic to be celebrating another Seven Daysies nomination for Best Cooking Class and we appreciate your support!
