Boost your mental and physical health with plant food. This salad’s persimmons had me chanting slow down to thoroughly enjoy every little morsel. Depending more and more on greens, seeds, bits of smoked salmon, and grains like quinoa, allows me to provide just enough protein for good energy and positive attitude. Remembering how a small amount of protein fed my family of 8, growing up in Poland in 50’s and 60’s. Back then it was due to scarcity of resources. Now, it is due to commitment to ultimate health, and doing my part of not harming the planet. Eat responsibly. Please!

Many people don’t know about nutritional value of quinoa, which comes from the Andes. I added some quinoa to my version of the Polish salad ‘Mizeria’ today, a perfect complete meal on a hot day, when trying to avoid meat. Focusing on bright colors insures one is on the right track nutritionally. Eating colorful food definitely boosts mental health for most people. If you’re not paying attention to what your food looks like, please slow down... similar effect to slowing down to smell the roses, or practicing to be mindfully in the ‘NOW!’

Please invest your time in adding multiple colors to your salad. I forgot I dropped a handful of walnuts and fresh dill before I started piling up extra ingredients which I finished grating outside to enjoy the sunshine. Eat slowly, savor every morsel. I love fresh dill. As a child I remember feasting on warm freshly baked bread Tata brought from the Jewish bakery he worked at, some whole milk butter, and tons of fresh dill, as a ‘wake up your senses’ experience, which I remember to this day.
