A beekeeping business operating for almost 100 years, through four generations, got caught in the path of the tenacious Bobcat Fire Monday, and lost all its honey for the year.

Here is a great recipe idea!
Honey is loaded with phytonutrients making it an immunity power house.
Garlic contains compounds that help the immune system fight germs.
Spinach is rich in vitamin C and may increase the infection-fighting ability of our immune systems.
This recipe has it all. :)

WARM SPINACH SALAD WITH HONEY & GARLIC VINAIGRETTE
10 ounces baby spinach (about 12 cups)
6 ounces button mushrooms, thinly sliced (about 2 cups)
1/4 cup sliced almonds, toasted
1/4 cup avocado oil
3 medium garlic cloves, thinly sliced
1 medium shallot, thinly sliced
1 tablespoon cider vinegar
2 teaspoons raw honey

1. Combine spinach, mushrooms, and almonds in a large serving bowl; set aside.
2. Heat oil in a small frying pan over medium heat. When it shimmers, add garlic and shallot and season well with salt and freshly ground black pepper. Cook until garlic is browned, about 2 minutes, then add vinegar and stir to incorporate. Remove from heat and stir in honey until dissolved.
3. Pour vinaigrette over salad and toss to coat. Serve immediately.

We harvested the first honey of 2019 today. Ojai Orange Blossom! Here it is pouring into a 55 gallon drum. We will fill 7 drums today and we are just getting started. :)

Beekeepers provide a pollination service for ranchers and in order to do that we must use European honey bees that colonize so we can deliver boxes of bees to an orchard when it is in bloom. The Africanized or "Killer Bee" can easily take over our colonies and it is a constant and expensive battle for us.
