While maybe not the prettiest, the medjool date is so caramely, delicious, and is full of health benefits! Dates are a great source of fiber, vitamins, and minerals. I had never had one until a couple of years ago, and now I always keep a container on hand. You can blend them into smoothies or desserts as a natural sweetener, or one of my favorite ways to enjoy one is to stuff it with a little peanut butter and chocolate chips for the perfect after dinner treat 🥜🍫

They say an apple a day keeps the doctor away. I’m not sure if I can promise that, but apples are an excellent source of fiber and nutrients and are one of my favorite fruits because they are so versatile. Not a fan of plain apples? Step up your “apple nacho” game!

✨ Sprinkle - try sprinkling on some cinnamon or sugar free jello powder (a favorite of Sanford Vermillion’s clinic director and her kids)!
🥜Dunk - try dunking your slices in nut butter (my favorites are peanut or almond butter) or even yogurt!
🍭Sweet - if you’re in the mood for something a little sweeter, try topping with honey, a combo of peanut butter and mini chocolate chips, or a combo of almond butter & shredded coconut flakes!

Time saving tip: did you know you can meal prep apple slices for the next day by mixing them with a little lemon juice? The lemon juice helps prevent the slices from browning. The sugar free jello option will also help prevent browning!

Need some fast and easy workday lunch inspiration? Wraps are quick, and the options for filling it are endless! An added bonus - they don’t make you feel bogged down or make you hit the afternoon slump.

Estimated prep time: 10 mins if you need to chop any veggies, less than 5 if already chopped!

Pick your favorite pita bread or tortilla, load it up with hummus or a dressing of your choice, and top with whatever vegetables are in your fridge. Throw in some shredded chicken or chickpeas for extra protein!

Here, I topped a whole grain pita with garlic hummus, arugula, radishes, and pickled red onions.

Let’s kick off the first recipe idea of 2023 with everyone’s favorite - pizza! 🍕

When you first hear the word pizza, you might associate it as a “bad” food for you. But get creative with your toppings, and you can make pizza a healthy meal for the family to enjoy! I topped the left pizza with a homemade pesto and sliced zuchini and radishes. The right is a more traditional margharita style. I love brocoli on an Alfredo pizza or carrots on a Thai pizza. Chop your favorite vegetables small, top your pizza with them, and you can’t go wrong! 🥦🥒🥕🍅🍕

Finding new ways to eat your vegetables keeps textures interesting and your palate excited. Are you someone who has sworn off roasted brussel sprouts because of their texture? Instead, try them raw! Chop the ends off, throw them in your food processor, and add to your salad.

Here, I mixed shredded brussel sprouts with chopped kale and added craisins, pumpkin seeds, and Parmesan cheese. Top with the dressing of your choice! Add some chicken or shrimp if you are looking for extra protein.

Superhero muffins - a great way to sneak some hidden fruit and/or veggies into any picky kid’s diet! The term “superhero muffins” was coined by runner Shalane Flanagan and nutrition coach Elyse Kopecky for muffins that feature hearty whole grains, fruits, and vegetables. This is one of their original superhero muffin recipes and a favorite in my house! It features carrots & green apple, and I opt for including walnuts.

I love to meal prep on Sundays to set myself up for a healthy week. These muffins store well in the refrigerator or freezer and are the perfect easy, healthy breakfast to grab on the go! Just be careful grating the apple because it gets slippery.

Who said salads have to be boring? Using new flavor combos and adding texture makes salads exciting. Try switching out your normal iceberg lettuce or spinach with arugula (my favorite green veggie!). It’s Sunday night, what are you serving to start your week off right? We are having sweet potato pizza bites! This probably sounds strange and might not be the prettiest picture, but I assure you they are delicious and will go great with a side salad.

Cut a sweet potato into 1/4-1/3 inch coins, spray with olive oil, sprinkle with salt and pepper, and bake at 400 for about 20 minutes. Flip the rounds over and bake for another 8 minutes. (exact baking time will depend on the thickness of your coins)
Top with pizza sauce & your preferred toppings. We used mozzarella & bacon. Return to oven for another three minutes or until cheese is melted. We finished ours with chopped chives!

This is a great recipe to get your kiddos involved in! Let them sprinkle on the toppings of their choice to make personal pizza bites! Getting them involved in the cooking might help any picky eaters feel more comfortable trying something new.

Instead of using chocolate chips, try adding fruits like blueberries or raspberries to your bread to sneak in extra nutrients. Here, I added blueberries to my banana bread and walnuts (which are a good source of omega-3 fatty acids that can help your cholesterol)!

One of my favorite parts of Vermillion is its small businesses. Supporting your restaurants in Vermillion by eating out doesn't mean you have to compromise your health goals. On the left is the Blackened Salmon Salad from Café Brulé, and on the right is the Sesame/Princess from Silk Road! Both are delicious and highlight an assortment of vegetables.

This week I’ve been enjoying mashed avocado mixed with lemon juice and red pepper flakes on top of whole wheat toast finished with some sprouts for breakfast. 🤤 Eating healthy doesn't have to be complicated. Even when eating foods that feel indulgent like pasta, we can find easy ways to make healthier swaps. Look at the nutrition label to see the ingredients in your pasta and try to choose ones that feature whole grains or alternative flours made from chickpeas or lentils for a higher fiber content and less refined grain than regular pasta. Eating enough fiber throughout your day helps lower your risk of type 2 diabetes, heart disease, and stroke. Here, I topped a high fiber pasta with some homemade pesto and cherry tomatoes.
