Lowering Carbohydrate Intake Helps Reduce Fatty Liver – What the Research Shows

Recent studies suggest that reducing carbohydrate intake—especially refined and high‑glycemic carbs—can significantly benefit liver health, particularly for those dealing with non-alcoholic fatty liver disease (NAFLD), also known as metabolic dysfunction-associated steatotic liver disease (MASLD).

• A randomized trial (16 weeks) compared a low‑carbohydrate diet (40% carbs) with a low‑fat diet (60% carbs). The low‑carb group experienced double the drop in liver enzymes (ALT) compared to the low‑fat group, indicating better liver function .

• In adolescents with NAFLD, a moderately carbohydrate-restricted diet led to meaningful reductions in liver fat, improved body composition, and enhanced insulin sensitivity—even without calorie restriction .

• A case report of a 25-year-old with NAFLD showed that switching to a low-carb diet for four months produced marked improvements in both clinical symptoms and laboratory liver markers .

• Broader reviews indicate that carbohydrate restriction can decrease liver fat, lower inflammation, and improve liver enzyme profiles .
