Whip up a quick and healthy Chickpea and Avocado Salad for lunch! πŸ₯‘πŸ₯— Full of protein and healthy fats. ​​​​​​​​​ ​​​​​​​​​
Ingredients:

1 can chickpeas, drained and rinsed
1 avocado, diced
1 cup cherry tomatoes, halved
1/4 cup red onion, finely chopped
Juice of 1 lemon
2 tablespoons olive oil
Salt and pepper to taste

Instructions:

In a large bowl, combine chickpeas, avocado, cherry tomatoes, and red onion.
In a small bowl, whisk together lemon juice, olive oil, salt, and pepper.
Pour the dressing over the salad and toss gently to combine.
Serve immediately.

Try a light and healthy twist on pasta with Zucchini Noodles and Pesto! 🍝πŸ₯’ Perfect for a summer dinner. ​​​​​​​​​ ​​​​​​​​​
Ingredients:

2 medium zucchinis, spiralized
1 cup cherry tomatoes, halved
1/4 cup parmesan cheese, grated
1/2 cup pesto sauce
Salt and pepper to taste

Instructions:

In a large bowl, combine spiralized zucchini noodles, cherry tomatoes, and pesto sauce.
Toss until the noodles are well coated with the pesto.
Sprinkle with grated parmesan cheese.
Season with salt and pepper to taste.
Serve immediately.
