After switching to a whole food plant-based lifestyle in the middle of a vacation to Mexico, Tracy and her husband have never looked back. Together they experienced the benefits of excellent blood work, normal blood pressure, a 15-pound weight loss, and no more indigestion! The biggest surprise was discovering a variety of delicious foods they had never tasted. Since that time, over 10 years ago, Tracy has continued to study what she believes to be the best way of eating to ensure long term health, free from chronic disease. Tracy has completed and received the Cornell Plant Based Nutrition certificate and the Forks Over Knives Plant Based Cooking certificate. She is an avid reader and continues her education by reading anything and everything on WFPB diets and listening to her favorite plant guru podcasts. Now that Tracy has retired from her career as a pediatric occupational therapist, she is excited to use her teaching and coaching skills to help others interested in WFPB eating.

Tempeh is made from fermented soy beans. It has a nutty flavor and is an excellent source of protein. I usually slice it, steam for 10 minutes, brush with BBQ sauce and bake for 20 minutes at 400. Served with coleslaw and avocado on a Daves Killer bun with air fried potatoes. Quick and simple dinner.

We are 4 weeks into our Kickstart class. Tonight we sampled Fruited Breakfast Quinoa, Ginger Noodles, and Red Curry Chickpeas and Sweet Potato soup. We also learned about foods that tend to be addictive. No one runs to 7 11 at 10 pm to get strawberries or green beans. Great class with some really fun people. interested in just trying one class?
