🌯🔥 Vegan Sheet Pan Crunch Wraps
🛒 Ingredients (6–8 slices)

6–8 large flour tortillas (check they’re vegan)

1 tbsp olive oil

1 small onion, diced

2 cloves garlic, minced

1 cup cooked lentils or 2 cups crumbled firm tofu

1 can black beans (drained)

1 cup corn

2 tbsp tomato paste

1–2 tsp taco seasoning

½ cup water

1 cup salsa

1–1½ cups vegan shredded cheese

1 cup tortilla chips (lightly crushed for crunch 💥)

½ cup vegan sour cream or unsweetened plant yogurt

1 cup shredded lettuce

1 tomato, diced

Salt + pepper to taste

Optional: jalapeños, avocado, hot sauce, chipotle in adobo.

👩‍🍳 Instructions
1️⃣ Make the filling

Heat olive oil in a pan.
Cook onion 3–4 mins until soft. Add garlic, cook 30 seconds.
Add lentils or tofu + taco seasoning + tomato paste.
Pour in ½ cup water, simmer 3–4 mins.
Stir in black beans + corn. Season to taste.

You want it thick, not watery.

2️⃣ Assemble on sheet pan

Preheat oven to 200°C (400°F).
Line baking sheet with parchment.

Arrange tortillas overlapping around edges of pan so they hang over. Fill gaps with one in the center if needed.

Layer:

Vegan filling

Salsa

Crushed tortilla chips

Vegan cheese

Vegan sour cream drizzle

Fold tortillas inward to seal. Add one tortilla on top if needed to fully close.

3️⃣ Bake

Brush top lightly with oil.
Bake 15–20 minutes until golden and crispy.

Let rest 5–10 minutes before slicing.

🍅 One-Pan Lentil + Gnocchi Bolognese
🛒 Ingredients (Serves 3–4)

1 tbsp olive oil

1 small onion, finely chopped

2–3 cloves garlic, minced

1 small carrot, grated (adds natural sweetness 👌)

½ tsp chili flakes (optional)

1 tsp dried oregano

1 tsp dried basil

1 cup red lentils (rinsed)

2 tbsp tomato paste

1 can (400g) crushed tomatoes

2½–3 cups vegetable broth

500g shelf-stable gnocchi

Salt & black pepper to taste

¼ cup milk or cream (optional, for creamier finish)

Fresh basil or parsley (optional)

Grated parmesan (optional)

👩‍🍳 Instructions

1. Sauté the base
Heat olive oil in a large deep pan over medium heat.
Add onion + carrot and cook 4–5 minutes until soft.
Add garlic, chili flakes, oregano, basil. Cook 30 seconds (don’t burn the garlic).

2. Build the sauce
Stir in tomato paste and cook 1 minute.
Add crushed tomatoes, rinsed lentils, and vegetable broth.
Season with salt + pepper.

Bring to a gentle boil.

3. Add gnocchi (straight into the same pan!)
Once simmering, stir in the gnocchi.
Cover and cook 12–15 minutes, stirring occasionally, until:

Lentils are tender

Gnocchi are soft

Sauce is thick and rich

If it gets too thick, splash in more broth or water.

4. Finish it
Stir in milk or cream (if using).
Taste and adjust salt/pepper.
Top with parmesan + fresh herbs.

And let me tell you, this IS a match made in heaven. It’s sweet, moist, super easy to make and tastes INCREDIBLE. ⁣

Enjoy it with or without the luscious vegan cream cheese frosting for a delicious breakfast or snack.⁣

INGREDIENTS ⁣

▪️4 large very ripe bananas, mashed⁣
▪️1/3 cup maple syrup ⁣
▪️1/3 cup coconut oil, melted⁣
▪️2 1/4 cups self raising flour ⁣
▪️2 large carrots, grated ⁣
▪️2 tsp cinnamon ⁣
▪️1/2 cup pecans ⁣

Topping (optional)⁣

▪️3 tbsp vegan cream cheese⁣
▪️2 tbsp vegan vanilla yoghurt (or plain)⁣
▪️1 tbsp maple syrup ⁣
▪️1/2 tsp cinnamon ⁣

METHOD⁣

▪️Preheat oven 180c⁣
▪️In a large bowl mix together the bananas, maple syrup, coconut oil and carrots. ⁣
▪️Then add the flour, cinnamon and pecans. Mix well⁣
▪️Pour into a prepared loaf tin ⁣
▪️Mix the topping ingredients together ⁣
▪️Bake for 40-45 minutes or until a toothpick comes out clean ⁣
▪️Once cooled spread on cream cheese mixture, and top with extra pecans. ⁣
