Craving something cozy... without the sugar crash?

These soft-baked pumpkin cookies are the perfect way to ease into fall—comforting, nutrient-dense, and kid-approved. 🍪

Why they’re better than your average cookie:
• Pumpkin is packed with Vitamin A, fiber, and antioxidants
• Almond flour = protein + blood sugar-friendly
• Coconut sugar adds sweetness without the spike

Pumpkin Spice Cookies

Ingredients:
1 cup almond flour
½ cup pumpkin purée
¼ cup coconut sugar (or maple syrup)
1 egg
1 tsp pumpkin pie spice
½ tsp baking soda
Pinch of salt

Directions:
Mix all ingredients, scoop onto parchment, and bake at 350°F for 12–14 minutes.

Your joints love anti-inflammatory foods—and this salad is loaded with them. Spinach for magnesium, strawberries for vitamin C, walnuts for omega-3s, and a drizzle of olive oil for healthy fats. Each ingredient plays a role in reducing inflammation and keeping cartilage healthy.

✨ Recipe: Toss 2 cups baby spinach, 1 cup sliced strawberries, ¼ cup chopped walnuts, and ¼ cup crumbled feta. Dress with olive oil + balsamic vinegar.

Spicy Carrot and Lentil Curry Let this dish warm your soul any day you need comfort.

• 1 Tbsp. coconut oil
• 2 cups Sweet Onion (diced)
• 3 Large Garlic Cloves (minced)
• 2 Tbsp. Fresh Ginger (finely grated)
• 2 Tbsp. Red Curry Paste
• 4 Cups Organic or homemade Vegetable Stock (Chicken works too) Instructions:
• 2 Cups Carrots (grated)
• 1/4 tsp Crushed Red Pepper Flakes
• 1 cup Dried Red Lentils
• 1 Cup Thawed edamame
• 1/2 Cup Fresh Chopped Cilantro
• Fresh Ground Pepper (to taste

Add onion, garlic and ginger. Sauté for 5 minutes or until onions are soft and translucent. Add 1 cup of vegetable stock and stir in curry paste. Add carrots and crushed red pepper flakes. Shelled Edamame Beans (soy beans) ) Heat oil in a large sauce pan over med-high heat. Add onion, garlic and ginger. Reduce heat to med-low. Cover and cook until carrots are slightly tender. Approx. 5 minutes. Add remaining stock, lentils and edamame beans and bring to boil. Reduce heat, cover and let simmer for 10 minutes until lentils are tender. Remove from heat, stir in cilantro and serve with a dollop of Greek yogurt, delightful!

Suggestions for Protein Boost & Customization:
• Protein Boost: For an extra hit of protein, add some tofu or grilled chicken to your curry. Both options complement the dish perfectly and enhance the protein content.
• Side Pairing: Pair with brown rice or quinoa for additional fiber and carbs. This makes the dish more filling, especially for post-workout recovery or busy days.
Consistency: If you prefer a thicker curry, blend a portion of the soup or stir in coconut milk for a creamier texture.
