Asparagus is proof that vegetables can be elegant, easy, and still have one deeply suspicious side effect.

Let’s talk asparagus.

It’s one of the easiest spring vegetables to cook, it looks fancy on a plate, and it plays beautifully with lemon, garlic, orange oil, Parmesan, shrimp, scallops, chicken, steak, eggs — basically anyone invited to dinner.

It’s also naturally light, full of fiber, and a great way to make your plate feel fresh and abundant without adding a lot of fuss.

If your food tastes a little flat lately, it may not need more work. It may just need a little brightness.

Valencia Orange Oil is one of those little kitchen shortcuts that makes everything taste fresher, prettier, and more expensive than it actually was.

Use it to sauté shrimp. Shake it into a vinaigrette. Drizzle it over roasted carrots, asparagus, broccoli, or Brussels sprouts. Add it to a salad with oranges, goat cheese, chicken, shrimp, or scallops.

It gives you that fresh citrus flavor without zesting, squeezing, or making a giant mess on the counter.

This is what I call a “look at me making good choices and still eating like a queen” dinner.

If you’re celebrating, a few smart swaps can keep things festive and keep you feeling good: think fajitas, taco salad, grilled proteins, salsa, and the heavier extras like cheese, queso, and sour cream on the side. And when it comes to drinks, a skinny margarita or a fun mocktail can still bring all the party energy without quite so much aftermath.

This week’s Just Tell Me What to Cook is:
Apricot Glazed Chicken Thighs with New Potatoes & Asparagus.

And yes, it is just as good as it sounds.
Sweet. Savory. A little warm spice. Tender chicken. Spring asparagus. Baby potatoes. One sheet pan. Minimal drama.

This is exactly the kind of dinner I love this time of year:
fresh and delicious, but still ridiculously easy.

Because I don’t know about you, but the less cleanup I have standing between me and dinner, the more likely I am to actually make it. Happy to share the recipe- just ask!
