🍛 Thai-Style Chicken Stew (Half Recipe Edition!) 🇹🇭💪
Perfect for a cozy, high-protein, anti-inflammatory meal—Chiro-approved!

🛒 Ingredients
🥥 1 can (13.5 oz) full-fat coconut milk
🍅 ⅓ cup tomato paste
🌶️ ½ cup mild Thai red curry paste
🥄 ¼ cup coconut aminos
🍋 2 tsp fresh lime juice
🧂 2 tsp sea salt
🌿 ¾ tsp ground ginger
🍗 3 lbs boneless, skinless chicken thighs or breasts
🧅 1 yellow onion, thinly sliced
🧄 2 garlic cloves, minced
🥦 1 (16 oz) bag frozen stir-fry veggies
🍚 Cauliflower rice (for serving)
🌱 Fresh cilantro (optional garnish)

👨‍🍳 Directions

1️⃣ In a bowl, whisk together coconut milk, tomato paste, curry paste, coconut aminos, lime juice, salt, and ginger.

2️⃣ Add chicken, onion, and garlic to your Instant Pot or slow cooker. Pour sauce over top.

3️⃣ Instant Pot:
➡️ Seal lid. Cook on High Pressure for 10 min.
➡️ Natural release. Stir in veggies and steam 10 min.

OR

⏱️ Slow Cooker:
➡️ Cook on Low 6 hrs or High 3 hrs.
➡️ Add veggies and cook 1 more hr.

4️⃣ Serve over cauliflower rice and top with cilantro 🌿

Mocha Coffee Smoothie ☕🍌
Perfect for busy mornings, post-workout fuel, or a healthy afternoon pick-me-up!

Ingredients:
• 1 frozen banana
• ½ cup brewed coffee (cooled)
• 1 scoop protein powder
• ¼ cup oats
• ½ cup cottage cheese (or substitute plain Greek yogurt)
• 1 Tbsp cocoa powder

Optional Toppers:
• Sprinkle of cinnamon ✨
• 1 Tbsp chocolate chips 🍫

Directions:
Add all ingredients to a blender and blend until smooth and creamy.
