Taco Salad Recipe

Ingredients:

1/2 lb ground beef or turkey

1 tbsp taco seasoning

4 cups chopped romaine lettuce

1/2 cup black beans (canned, drained)

1/2 cup cherry tomatoes, halved

1/4 cup shredded cheddar cheese

1/4 avocado, diced

Salsa or Greek yogurt (for topping)

Instructions:

Cook ground meat in a skillet over medium heat. Add taco seasoning and stir well.

In a large bowl, combine lettuce, beans, tomatoes, cheese, and avocado.

Add the cooked taco meat.

Top with salsa or Greek yogurt.

Salmon Avocado Salad Recipe

Ingredients:

1 cooked salmon fillet (grilled, baked, or canned)

1 avocado, diced

2 cups mixed greens

1/2 cucumber, sliced

1/4 red onion, thinly sliced

Juice of 1/2 lemon

1 tbsp olive oil

Salt & pepper to taste

Instructions:

Flake the salmon into bite-sized pieces.

In a large bowl, combine greens, avocado, cucumber, and onion.

Add salmon on top.

Drizzle with lemon juice and olive oil.

Season with salt and pepper, then toss gently.

1 can (15 oz) chickpeas, drained and rinsed

1 cup cherry tomatoes, halved

1/2 cucumber, diced

1/4 red onion, thinly sliced

1/4 cup crumbled feta cheese

2 tbsp olive oil

Shrimp Tacos with Cilantro Lime Bacon Slaw

Ingredients:

For the Shrimp:

1 lb shrimp, peeled and deveined

1 tbsp olive oil

1 tsp chili powder

1/2 tsp cumin

Salt & pepper to taste

For the Slaw:

2 cups shredded cabbage

2 slices cooked bacon, crumbled

1/4 cup chopped fresh cilantro

Juice of 1 lime

2 tbsp mayo or Greek yogurt

Other:

Small tortillas

Lime wedges (for serving)

Instructions:

Toss shrimp with oil, chili powder, cumin, salt, and pepper. Sauté or grill for 3–4 minutes until cooked.

In a bowl, mix cabbage, bacon, cilantro, lime juice, and mayo to make slaw.

Warm tortillas, fill with shrimp and slaw.

Serve with extra lime wedges.

Ingredients:

1 can (13.5 oz) coconut milk

2 tbsp red curry paste

1 tbsp oil

1/2 onion, chopped

1 bell pepper, sliced

Instructions:

2 slices tomato

2 tbsp Greek yogurt or light mayo

Instructions:

Warm the tortilla in a pan for 10 seconds.

Instructions:

Prepare the Yogurt:

In a small bowl, mix the Greek yogurt with honey (or maple syrup) and vanilla extract. Stir until smooth.

Layer the Parfait:
