Simple + Delicious Spiced Shrimp Taco Bowl by shredhappens
This lineup and this weekend just reminded me of summer. Not to be a jerk, but we had some amazing weather (sunny and mid 70s) and I spent as much time as possible outside. Wrapped up the weekend with this sitting in the backyard & it just hit the spot.
The shrimp is spiced with a mix of fennel, smoked paprika, & red chili flakes and just a little salt. So simple yet so good. I served it along with a big base of butter lettuce, half an avocado, some shredded cheese, and a homemade pico with red & yellow tomatoes, cilantro, red onion, and lime juice. Enjoyed it all with some MichelobULTRA.
Here is how I made everything:
1.First, I mixed the shrimp with the spices. I took 1lb wild shrimp and drizzled 1 tablespoon olive oil on it and spiced with some crushed fennel seeds (about 1/2 to 1 tablespoon), some high quality smoked paprika (1 tbsp tablespoon), garlic powder, a little salt, and added 3 crushed garlic cloves. Massage the spices well and let this sit for 15-30 mins. You can just get started right away if you’d like.
2.When you’re ready to make the shrimp, get a pan on medium heat, add 1 tablespoon of oil/butter of your choice, and cook on each side for about one minute. Dont over do shrimp as it gets rubbery.
3.Once you’ve got your shrimp done, I started with a big base of greens and added the rest of my ingredients. I added 1/2 avocado, cheese, and the pico. Season the pico however you like to taste, I like a little extra lime juice, fresh jalapeño, and salt and pepper. Pico is just finely chopped onion, tomatos, fresh jalapeño, and fresh cilantro & lime.
