Your brain can't tell the difference between a looming work deadline and being chased by a tiger. For both, it releases the stress hormone cortisol, which floods your bloodstream with sugar to prepare you for a fight. Metabolically, they are worlds apart.
Your body has to work hard to break down the fiber and protein in a WHOLE chickpea. The energy release is slow and controlled.
But when that chickpea is pulverized into flour to make pasta, the work has been done for you. It hits your bloodstream much faster, requiring a bigger insulin response.
The rule: The less processed your food, the better your blood sugar. Your body knows what to do with whole foods. Honor that.

But here's the question that matters: What is it doing to your INSULIN?
