Every August, I make tomato preserves to prolong their season. There is something special about my homemade tomato preserves. I never found store-bought canned tomatoes or tomato sauce that resembled my super simple tomato sauce. When I open a jar in winter, it’s as if I just cooked them. I can quickly turn it into pasta sauce or use it to add a splash of flavor to a soup or stew.

There is another reason I go through the trouble of buying 25 pounds of second-chance tomatoes and spending half the day chopping, cooking, and packaging them.
I’m investing my time and energy into making those preserves because I’m keeping a tradition alive. I'm “preserving the act of preservation.” Some of the world’s most invaluable knowledge resides within people who must pass it down in order for it to survive, said the cultural anthropologist Tim Curtis, the secretary of UNESCO’s Convention for the Safeguarding of the Intangible Cultural Heritage.
