Costa Rica ❤️ 🇨🇷

Putting the V back in vegetarian. I’ve always loved the word vegetarian. The way it feels in the mouth, the number of syllables, the stateliness of it. But back when I was a vegetarian, I have to admit that I had a very non-vegetable-based diet. I would say I ate primarily an egg and cheese based diet: lots of grilled cheese, mac & cheese, typical things of youth. Now that I have a truly plant-based diet, I have to use the word vegan instead of vegetarian. I’ve learned, though, that the original meaning of vegetarian referred to a diet made up of vegetables and other plants. The word vegan came into being once lacto-ovo vegetarianism became popular.

When I arrived in Costa Rica yesterday, I stopped to get some food at the airport. It looked like the best option was a vegetarian sandwich, so I asked what was inside, fully expecting cheese. Nope, nothing but vegetables – carrots, zucchini, tomatoes. In fact, the lady at the counter looked at me a bit strangely. “We don’t put cheese in the vegetarian sandwich,” she said.

PS—this photo is obviously NOT the vegetarian sandwich 😂. That was eaten too quickly to photograph. This is this morning’s breakfast – an açai bowl at a yoga Shala. Heavenly!

I'm so excited to announce a new offering!

I've just completed a long-time dream of certifying as a Food For Life instructor with the Physicians Committee for Responsible Medicine. I look forward to bringing you nutrition and cooking classes using their award-winning curricula, designed to address issues like healthy weight management, cancer prevention and survival, diabetes prevention and treatment, hormone balance, and more!

I plan to teach classes both online and in-person, so if you know of a local (Athens, GA area) venue that might be a good fit for hosting in-person classes, please let me know.

It was lobster night up here in Maine for the meat eaters in my family. So what were the plant-based among us supposed to do? Hang our heads and settle for a run-of-the-mill meal?

Not this crew! We whipped up some incredibly delicious king oyster mushroom “lobstah” rolls from VegNews magazine. They were amazing!

It was also so much fun to find a way to adapt a beloved culinary tradition to make it work for us. And truthfully, this spirit of adventure and discovery is one of my favorite parts of being vegan, whether it’s looking for vegan restaurants in unexpected places or, like today, finding new recipes to recreate favorite dishes.

Let me know if you have any cool adaptations to share. I’m also happy to brainstorm with you if you’re looking for plant-based inspiration or have any questions.

Anyone who knows me knows that I am a bit obsessed with Jazzercise. I mean, come on…dance fitness that works even for people like me who have never considered themselves “dancers”, great music, awesome strength training, supportive community…what’s not to love? 👯‍♀️

I usually take — and teach – classes at my local studio, but today I’m looking forward to a special livestream to celebrate Jazzercise’s 55th anniversary! There’s something cool about being part of a fitness program that’s even older than I am 😂

Even though I’m a major Jazzercise proselytizer, I get that it’s not for everyone. As a health coach, my job isn’t to prescribe an exercise routine or fitness plan for you but rather to help you draw on your strengths and figure out what works best for you. 💪

Hey there! Meet Ziggy, our new rescue pup and just one of the many things that’s changed in my life since I’ve last posted here! Taking walks with Ziggy is one of the best parts of my day. As is dog park time, cuddle time, and, well…everything we do together. 🐾🦴💕

More big news: I’m relaunching my coaching business. No more Ahimsa Health Coaching; I’m now Susan Bleyle Coaching, hopefully clearer, more succinct, and a name you can remember!

I’m currently taking an advanced coaching course to prepare for the National Board of Health and Wellness Coaches certifying exam. So keep an eye out here for an announcement next month when I’m ready to offer a HUGE discount to new clients who sign up as I complete the 50 required coaching hours needed for the exam. It’ll be a huge win-win!
