Y'all make this, it's so good!
It's creamy, lemony, chicken with white beans and artichokes. High in fiber, even more served over a yummy grain like Farro or brown rice.
Chicken breasts or thighs
Artichokes, quartered
White beans, 2 cans for a family of 6
Lots of spinach/baby kale
Cream sauce = a block of cream cheese, 1/2cup-3/4cups Greek yogurt or skyr. You could sub cottage cheese or sour cream for that combo as well. Plus the zest and juice of 1 lemon, garlic, and a little broth to thin out the sauce.
Top with Parmesan and bake at 375 for 25-30 minutes
