VOLUNTEER APPRECIATION EVENT
We had the opportunity to thank our amazing volunteers for all they do every day at Maplewood. Volunteer Coordinator, Alex, went all out with a puzzle themed event, including fabulous decor, fun puzzle games that encouraged teamwork, delicious food and gifts. A big piece of the success of Maplewood's recreation programs is our army of volunteers who brighten our residents days in so many ways. Thank you to all our volunteers!

A big thank-you to our friends at Webster Public Library for bringing the joy of reading right to our residents! Your pop-up book fair was a wonderful experience—residents loved getting to know you and browsing the book selections.

HEALTHY & DELICIOUS EGGPLANT PARM
Volunteer, Mary Jane, treated residents to her homemade eggplant parmesan today during her "Cooking with Mary Jane" program. Her healthy take on a popular classic Italian dish got rave reviews! For this recipe, there's no breading or frying. The fresh eggplant (which Mary Jane purchases at a local farm stand) is baked in the oven.

Here's the recipe:
1 large eggplant
salt and pepper to taste
3/4 cup store-bought marinara sauce
3/4 cup shredded part-skim mozzarella
1/4 grated cup parmesan

Preheat oven to 400 degrees. Coat baking sheet with cooking spray. Cut off and discard both ends of the eggplant and then cut into thin round slices. Place in single layer on baking sheet, mist the top with the cooking spray and lightly season with salt and pepper. Bake for 20 minutes (until eggplant is soft and golden brown).
Top each slice with about 1 TBSP sauce and 1 heaping TBSP mozzarella. Sprinkle with parmesan. Bake for 5-10 minutes more until cheese is hot and bubbly. ENJOY!

Ducks hatch at Maplewood! Residents, family members and staff enjoy watching this wonderful mama duck and the arrival of her babies today! There were 10 eggs total! Look carefully in the video at the mom's tail area where a chick peaks out!

ZOOMOBILE COMES FOR A VISIT
We met some amazing new friends today during the Seneca Park Zoomobile visit! We got up close and learned all about fire belly toads, spotted turtles, a blue-tongued skink, and a three-banded armadillo. Huge thanks for the fascinating presentation!
