I just have to give a shoutout to one of my longtime heroes in nutrition, Marian Nestle. You may remember her classic What to Eat from 2006 well, she’s back with an updated version, What to Eat Now, and wow… so much has changed in 20 years.

From ultra-processed foods filled with new emulsifiers and fake flavorings to lab-made meats and “enhanced” drinks, the food industry has transformed and not for the better. Marian has spent decades exposing how food corporations influence government policy and how that shapes what we’re told is “healthy.”

At 89, she’s still walking her talk eating simply, mostly plants, and real foods, not “food-like products.” Her message reminds us to choose real, single-ingredient foods, not the colorful, chemical-filled imitations lining store shelves.
