Euro birthday family trip! 🇪🇸🇮🇹

We then went south to where we shopped the Santanyí market and biked 11.5 miles to the breathtaking calas

Quick birthday pit stop in Sicily at the most stunning where we White Lotus-ed the s**t out of this hotel. We also acquired fans which are KEY to surviving the Mediterranean heat

Costa Rica was not on my 2025 bingo card 🐒🌴🌅

I wouldn’t call myself spontaneous, but last year I made a list of how I want to show up in this world and I wrote the word free spirited.

The ability to act and think without being limited by social rules and do what you enjoy.

I had less than 2 days notice that we were leaving for 2 weeks. I really am more of a planner so this felt crazy to me, but I put it out in the universe that I wanted to be free spirited, so this was my opportunity to step up. (Be careful what you wish for 😅)

On the trip I got to walk on the beach every day, enjoy the sunset, swim in the ocean, take lots of yoga, see monkeys (iykyk), and simply just be.

Fortune favors the bold! I never would have done something so last minute without a push, but maybe I am a little spontaneous after all. 😏

Let me tell you a little something about consistency ✨

I can’t remember the last time I didn’t think “I need to lose 5lbs before vacation” or I need to go really hard at the gym before I leave and work out every day while I’m on my trip.

Over the last year, and more specifically the last 6 months I have been extremely consistent with my diet and exercise. I mainly eat at home, stick to a primarily grain/gluten free diet, and focus on protein and veg. I started working with a trainer, added more cardio, and working out 4-5x a week.

This trip I felt so confident and happy with my body! To me confidence comes from knowing I am doing everything I can to reach my fitness/health goals and bc I’ve been so consistent my confidence has grown. There was no negative self talk, comparisons, and I did not feel one ounce of guilt for not working out!

Consistency = confidence!!

Get consistent and a year later I promise it will all be worth it!

A reminder to myself just how far I’ve come on my health journey 💪🏼

The right was taken October 2018, and left is now. I had had ENOUGH of feeling sick and unhappy with myself so I got to work. There have been a lot of ups and downs over the last 5 years. I got to my “dream” weight then Covid f’ed it up, and you can sprinkle in bits of depression and anxiety too. I finally feel aligned with who I want to be and I think it shows!

I’ve done a lot of different diets and fitness routines to get where I am. These things are so personal so here are the general tips I’d recommend if you don’t know where to start:

✨ Fix your relationship with food. While you may love it, it doesn’t always love you back. Instead of emotionally eating, find other ways to cope with stress. Figure out which foods don’t agree with you and learn to let go. This was the most important step for me!

✨ Get serious about fitness bc it’s going to take work. If you are just starting out find what you enjoy and go from there, but eventually you have to get uncomfortable if you want to see changes. Walking ain’t gonna cut it!

✨ Find a support system. I’m lucky to have a partner who values wellness, but not everyone does! It’s a lot easier when you can share your struggles and success with someone. If you need extra help, look into a health practitioner or coach.

There will always be weight/health goals I want to reach, but I love having something to focus on. Hopefully this will inspire you to start your health journey or push yourself to keep going - results take time!

Chorizo Hash 🍳

This dinner is so good I had to make it two weeks in a row. Truly so simple and took 30 minutes from start to finish. This hash has all the feels - cozy, comforting, satisfying, & it’s grain and gluten free. It may look ugly but I promise it delivers.

Ingredients:
• 1 medium sweet potato
• 1 lb chorizo
• 1 onion
• 2 eggs
• 3 tbsp olive oil
• Cauliflower rice
• Spinach
• Garlic
• Salt, pepper, garlic powder, paprika, onion powder

Instructions:
• As you dice your sweet potato set the oven to 400. Toss the potato in 1 tbsp olive olive and seasonings. Put in the oven (even if it’s not fully heated). About 20-30 mins.
• Heat a pan and a cast iron on medium and put oil in each. Add the onion to the pan and sauté for 5 mins. Add the cauli rice to the cast iron and stir occasionally. Once the rice starts browning add desired seasoning.
• Add the chorizo and break up with your wooden spoon. Cook for about 5 mins then add a handful of spinach and chopped garlic. Stir until the spinach is wilted. Push everything to the side and crack the eggs in. Season with salt and pepper.
• Turn the broiler on low and let the potatoes crisp for a few minutes. Once the egg whites are solid place a lid on the pan and turn the heat down. When your eggs look ready to you, assemble the bowls and enjoy!

Olive Oil Cake 🫒

Personally, I think olive oil cake is the chicest cake. It’s simple, delicious, and dare I say ~*moist*~. This recipe is gluten free, refined sugar free, & from so we know it’s gonna be good.

Ingredients:
• 3/4 cup almond flour
• 1/4 cup coconut flour
• 1 1/2 tsp baking soda
• 1 tsp pink salt
• 1/3 cup olive oil DON’T USE CHEAP S**T
• 3/4 cup Lakanto Monkfruit Sweetener] maple syrup
• 3 organic eggs
• Juice of 1 orange + zest
• Lakanto Monkfruit Sweetener] powdered sugar to top

Instructions:
• Heat the oven to 350. Line a 9 in cake tin with parchment paper and oil.
• Mix all the dry ingredients in a small bowl, and all the wet ingredients in a large bowl. Add the dry to wet and continue to stir.
• Pour into the cake tin and bake for 25 mins. Let the cake cool and top with powdered sugar.

Healthy Twix 🍫

These bars are insane and imo are just as good as the real deal. I got this recipe from and it is on point! All the ingredients I used are which is an added bonus 😉

Ingredients:
Shortbread
• 1/2 cup almond flour
• 1/2 cup coconut flour
• 1/3 cup coconut oil melted
• 3 tbsp honey warmed
Caramel
• 1/2 cup almond butter
• 1/4 cup coconut oil
• 1/4 cup maple syrup
Chocolate
• chocolate bar
• 1 tbsp coconut oil
• Flakey sea salt

• Mix the short bread ingredients together and place in a square baking dish lined with parchment paper. Bake at 350 for 10-12 mins until golden. Let cool.
• Melt all caramel ingredients in a saucepan on medium low heat and stir for 2-3 mins until liquid. Let cool.
• When the shortbread and caramel are completely cooled, pour the caramel over the shortbread evenly and put in freezer for 1-2 hours.
• Melt the chocolate and coconut oil in a sauce pan or microwave. Pour over the bars and top with sea salt. Place back in the freezer for 5-10 mins/until chocolate is frozen. Slice and enjoy!

Steak Stir Fry Noodles 🥡 These low carb take out style noodles are so easy to make and taste like the real deal. You won’t even realize it’s kelp noodles! This dish would taste great with any protein you prefer. It’s perfect for anyone cutting out carbs/grains, but can’t resist a good noodle dish (aka me).

Ingredients:
• 1lb skirt steak
• 1 onion diced
• 3 cloves garlic minced
• Cole slaw mix
• Kelp noodles
• .natural.foods Korean bbq sauce (about 1/4 cup)
• Coconut aminos
• Egg (optional)
• Lemon
• Salt, pepper, red pepper flakes
• Olive oil

Insurrections:
• Cut the steak into small pieces and marinade in the bbq sauce for at least 30 mins or more. Put the kelp noodles in a bowl of warm water with sea salt and lemon juice and soak for 30 mins.
• Heat a pan on high and cook the steak for about 2 mins each side. Set aside. Turn the heat down and add 1 tbsp olive oil. Sauté the onion for 5 mins then add the cabbage. Continue cooking until soft. Push the veggies to the side, crack the egg in and scramble. Throw in the garlic and season everything.
• Put the kelp noodles in the pan and slightly splash everything with coconut aminos. Return the steak to the pan and stir everything until evenly mixed. Enjoy!

Collard Wrapped Burritos 🌯

I’ve been loving collard green wraps as a grain free sub, but they’re always really tough and the flavor is overbearing. I blanched these greens and they were perfectly soft, held everything together, and tasted great.

Here’s how you make it.

• Prep your filling. I used ground beef with taco seasoning, cauliflower rice, pico de Gallo, and avocado. Make it your own!
• Cut the stem of each leaf, then use a sharp knife to trim along the spine. Fill a bowl with ice water, and bring a pan of water to a boil. Drop each collard leaf into the boiling water for 30 seconds then immediately into the cold. Pat dry.
• Assemble your burrito on the leaf spine side up. Fold sides in, then slowly roll it up (google how to fold burrito). If your leaves are small use two and put parallel next to each other. Enjoy!
