Ever heard of a cordon blue potato lasagna? Well, now you have! 😜 I used my mandolin to make potato sheets, layered them into a baking tray. Stuffed it with layers of black forest ham and bacon and basted the whole thing with a scratch Boursin cheese sauce. Topped with a five cheese blend and extra mozzarella. Soooo delicious and not heavy at all! Try it!

Chicken poblano pepper lasagna with tomatillo cream sauce and pepper jack cheese. Made with zero carbs tortillas. Served with a side salad topped with fresh pico de gallo, spicy guac, sour cream and a shredded taco cheese blend…so scrumptious and simple to do. Still keto friendly ❤️🙌
