â˘Creamy Paleo Carbonara Pastaâ˘
So I actually created this recipe on accident as I was throwing a bunch of random stuff together for dinner the night before, but my boyfriend said it reminded him of a carbonara style pasta dish!

After he said that, I was pumped!! So the next day I went back into the kitchen to perfect this recipe and I can promise you this will definitely be on repeat

To make this dish vegan, you can just remove the bacon altogether or substitute for your fav meat alternative!

Linguine Pasta (enough for 2-3 servings)
2 cups almond milk
3 strips of organic bacon, cooked and crumbled
1/3 cup frozen peas, thawed
2 1/2 minced garlic
1 tsp avocado oil
1/4 tsp paprika
1/4 tsp onion powder
1 1/2 Tbsp nutritional yeast
1 1/2 tsp tapioca flour
1/2 cup pasta water
Salt & pepper
â¨bring a pot of water to a boil with a pinch of salt, and then add your desired amount of pasta into the pot to cook
â¨while the pasta cooks, place a pan on medium heat and add the avocado oil and garlic, sautĂŠ until the garlic begins to brown
â¨add in the almond milk and spices, stir together, and then bring to a simmer
â¨let simmer for about 5 minutes, stirring occasionally, then add in the nutritional yeast and more salt and pepper to taste
â¨before you drain the pasta, set aside 1/4 cup of pasta water, and then drain the pasta
â¨in a separate small bowl or cup, whisk together 3 Tbsp of the pasta water along with the tapioca flour
â¨pour the tapioca flour/water mixture into the sauce and continuously stir until you see the sauce thicken (about 5 minutes)
â¨the sauce will look a bit runny still but it will thicken as everything comes together
â¨add in the pasta, peas and crumbled bacon into the sauce, and mix
â¨I add a small splash of pasta water to the pasta and sauce as it simmers to ensure it gets extra creamy
â¨after the pasta is well mixed in the sauce and the peas are heated through, you are ready to serve!
