Clara. Those who have fur babies understand. The love goes deep. The grief is heavy. I’m so grateful for the love and healing she gave me. It’s hard to imagine my life without her. She will always be in my heart. What a blessing to have this little soul on the journey with me for as long as we had. 🙏

Vegan faux-tuna paninis. Start with a can of chickpeas, drained, mash ‘em up! Add a heaping Tabblespoon of mayo- I like the avocado oil blend because it’s soy-free. Include spices you like, I add some dill relish, lemon juice, salt, arugula, chopped tomato and chopped avocado. Mix it up! Brush or spray olive oil on the outsides of the bread- I like sourdough while the hubby likes low carb bread- then grill it up in the panini maker and serve hot and crispy. Ooooh baby! It’s a good day to be !
