Coming in third we have some food from a recent Board Meeting Luncheon. We went with some small plate ideas here and plated them on some fun sushi plates. Here was the menu: Okonomiyaki (Japanese Cabbage Pancake) topped with spicy mayo, ginger and scallions, Sun-Kissed Gnocchi with a golden tomato sauce, shaved parmesan and micro arugula lastly we had Seafood al Ajillo (Mexican style garlic marinated bay scallop) served over a cotija polenta with a mixed green salad and topped with Aji Amarillo Sauce (Garlic Yellow Pepper Sauce).

Next up we have our Platinum Club Waiting List Event. This one was smaller in scale but no less fun to put together some tasty bites for potential residents. We opted for a couple appetizers, a couple desserts and a signature cocktail to round it all out. For this one we did a braised pork belly pringle topped with pineapple pico de gallo, ebi sunomono (Japanese shrimp salad over steamed sushi rice), lavender honey panna cotta with a blackberry whipped cream, strawberry ginger bar cake with lemon cream cheese frosting and mint, and finally the French 75 as the choice cocktail.

Never a dull week here at Concord, here's some pics of our recent IL brunch. We had some fun with this one, the dishes include a shallot bread pudding, asparagus strata, quiche 3 ways (Florentine, ham & cheese and shakshuka), maple bourbon salmon, French toast, carnitas taco cones, apple fennel salad, tropical fruit parfaits, skillet hashbrowns, candied bacon, lime panna cotta, assorted Danish and strawberry shortcake.

We hosted a special brunch for our Resident Executive Board members, along with some of our LEC leaders.

This menu brought together a fun mix of eclectic flavors and styles, featuring everything from savory favorites to sweet finishes. Guests enjoyed dishes like grilled halloumi salad, candied bacon, broiled bulgogi halibut, souvlaki chicken skewers over tabbouleh, and a blueberry cardamom panna cotta with lemon whipped cream.

It was a great time of connection, conversation, and incredible food.
