CURRIED CHICKPEA STUFFED EGGPLANT

These little boats of deliciousness are packed full of goodness and so much flavor, they're a must try!
Ingredients:⠀⁠
▪2 tbs olive oil
▪2 ripe eggplants (not too hard)
▪2 cups chickpeas (or 1 can)
▪1 cup tomato passata
▪1 clove minced garlic
▪1/2 white minced onion
▪1 tbs garam masala powder
▪1 tsp curry powder
▪1/2 tsp each salt & pepper
▪1/4 tsp smoked paprika optional
▪1/4 tsp cayenne pepper optional; for spice
Optional:
▪few chopped walnuts
▪drizzle of tahini
▪bits of parsley

1. Preheat the oven to 350F/180C. Line a tray with parchment paper.
2. Slice the eggplants midway through, you may leave the stem. Drizzle with olive oil and sprinkle with salt & pepper. Place on the tray in the middle of the oven.
3. While the eggplants are baking, we're going to curry up the chickpeas by adding the oil to a deep frying pan on medium heat. Now add all the onion, sautee for a minute and add the garlic + all the spices, water & passata. Stir for a minute.
4. Add the chickpeas, if using canned, make sure to rinse beforehand. Stir to combine. Allow to simmer on low heat for 5 minutes.
5. Take off heat, and wait for the eggplants to be ready. May take anywhere up to 30 minutes depending on your oven. They should be golden brown and crisp on the outside while soft on the inside! Serve with a drizzle of tahini, walnuts & parsley if desired!

CAULIFLOWER & PEANUT CURRY

INGREDIENTS
2 cloves garlic
1 medium onion
1 tsp onion granules
1 tbsp tomato paste
1 1/2 cups shiitake mushrooms
4 cups cauliflower florets
1 cup tinned coconut milk
1 cup plant based milk
2 tbsp curry powder
1 tbsp garam masala
1 tsp cumin
2 tbsp peanut butter
2 tbsp coconut aminos
1 cup green peas 👩‍🍳 METHOD
Add the garlic, onion, onion granules and tomato paste to a non-stick saucepan with 2 tbsp water or 1 tsp oil, depending on your preference. Sauté for 3-4 minutes to soften. Now add the shiitake mushrooms and cauliflower florets. Continue to cook for a further 2-3 minutes until the mushrooms soften, and add the coconut milk, plant based milk, curry powder, garam masala, and cumin. Simmer, stirring frequently, for around 5 minutes, then stir in the peanut butter, aminos and peas. Continue to cook for around 5-7 minutes more, adding more plant based milk if necessary, until the cauliflower florets are tender. Serve with rice of your choice.
