Healthy Sweet Potato Black Bean Bake

Ingredients:

2 cups sweet potatoes (diced)
1 cup black beans (rinsed and drained)
1 cup corn
1 cup tomato sauce or salsa
1 cup shredded cheese (cheddar or Mexican blend)
1 tbsp olive oil
1 tsp cumin
1/2 tsp paprika
1/2 tsp salt
1/2 tsp black pepper

Optional:

Fresh cilantro
Jalapeños
Avocado slices
Lime wedges

Directions:

Roast sweet potatoes with olive oil until tender.
Mix with black beans, corn, and sauce.
Season with spices.
Transfer to baking dish and top with cheese.
Bake until cheese melts.
Serve with toppings.
