Hereβs a quick, delicious, and gluten-free recipe to try this week:
β¨ Roasted Harvest Veggie Bowl
Ingredients:
1 sweet potato, cubed
1 apple, sliced
1 cup Brussels sprouts, halved
1 cup cauliflower florets
2 tbsp olive oil
1 tsp cinnamon
Salt & pepper to taste
Optional: drizzle of tahini or balsamic glaze
Directions:
1οΈβ£ Toss veggies & apple in olive oil, cinnamon, salt, and pepper.
2οΈβ£ Roast at 400Β°F for 25β30 minutes.
3οΈβ£ Serve warm with quinoa or over leafy greens.
