I love a good Steak Salad!

What does it for me - Juicy Steak, the perfect dressing and an on point crunch factor. This one has it all!

✨Crunchy Steak Salad w/ Dairy-Free Avocado Crema✨

✦Strip Steak seasoned with Hardcore Carnivore Charcoal Rub ( ) and grilled to medium rare, rest 10 minutes, slice
✦Dairy Free Avocado Crema (🔗 link in Bio)
✦2 T Pico de Gallo
✦2 T Sea Salt Crunchy Chickpeas (I used Saffron Road)
✦1-2 T Pepitas
✦Mixed Greens, roughly chopped
✦Shredded Red Cabbage
✦Shredded Carrots
✦Fresh Cilantro
✦Sea Salt & Fresh Cracked Black Pepper to dust...

10 min. Beef Bulgogi Wraps
6 hands up for seconds - what!!

New Family Favorite here!

If your kitchen has a revolving door like mine, this is easy peasy to batch cook between practices, etc. AND it's simple to modify for everyone!

Mix up the marinade and pop this in the fridge for 4+ hours or overnight. Cook a pot of rice.

When you're ready, scoop out a serving of meat, preheat your air fryer to 400F. Air fry for 10 mins.

I served these in butter lettuce cups with 1 T Jasmine Rice each & a drizzle of the reserved marinade, topped
with scallions, sesame seeds & red chili flake. Done!

You could pair with lettuce, rice, noodles, cauliflower rice, air fryer shredded cabbage, spaghetti squash, zucchini noodles - your choice!

~3 lbs. Strip Steak, sliced thin

Marinade
1/3 C Tamari or Soy Sauce
2/3 C Coconut Aminos
1 T sesame oil
2 T rice vinegar
4-5 cloves garlic, chopped
1 pear, sliced into thin strips (optional)
1 thumb sized piece of fresh ginger, minced or grated
1 T gochujang / korean chilis / red pepper flakes more or less depending on how spicy you like (I held back in marinade bc kids & added more when finishing for adults)

Reserve 2 T marinade for drizzle

Butterhead Lettuce (I used Gotham Greens)
Jasmine Rice (Optional)
Red pepper flakes
Sesame seeds
Scallions

The Taste of Summer!☀️🌱

I mixed up this Cucumber & Tomato Salad last night to pair up with Greek Seasoned Shaved Steak & Chicken + Quick Naan Bread + Tzatziki Sauce and ALL of it was a huge hit with my family. Grab the Naan Bread Recipe from , it's definitely a keeper!😉

Summer Salad
1 Cucumber, sliced & quartered
1 pint Colorful Cherry Tomatoes, quartered
1 can Artichokes Hearts in water, drained, rinsed, quartered
1/4 Red Onion, sliced thin
2 Tbsp Red Wine Vinegar
1 tsp Extra Virgin Olive Oil
1 Tbsp Fresh Basil, chopped
1 Tbsp Fresh Oregano
1 Tbsp Fresh Thyme
1/8 tsp Salt
1/8 tsp Pepper
(Feta Cheese - optional)

🔸Sticky Salmon Bowls🔸

Done in the time it takes to steam rice!

🔹3 Salmon filets, skin removed
🔹2T Tamari or Soy Sauce
🔹2T Coconut Aminos
🔹1 T Honey or Monk Fruit Sweetener
🔹1 t Toasted Sesame Oil
🔹1 T Rice Vinegar
🔹2 cloves Garlic, minced
🔹1 small knuckle Ginger, minced

1️⃣Whisk ingredients well to make marinade/sauce.
2️⃣Slice Salmon into bite sized cubes, add to a small bowl, toss with about 1/3 of the marinade mix, allow to soak for about 15 minutes.
3️⃣Preheat air fryer to 400F.
4️⃣Add salmon to air fryer and cook 5-6 minutes or until crispy & opaque.
5️⃣Meanwhile, add remaining marinade/sauce mixture to a small pan. On medium heat, cook to reduce sauce by about half.
6️⃣Serve Salmon over steamed Jasmine Rice, drizzled with sauce. Top with Sesame Seeds.
7️⃣Enjoy with your favorite Sushi ingredients
(Cucumber, Mango, Avocado, Scallions, Edamame, Jalapeno, Fresh Herbs)

Fish Taco Tuesday...
thanks to my talented fishermen.

*We are mostly a Catch & Release family, but every now and again, my boys bring me one or two to honor in the kitchen.

🐟Fish Filets dipped in Almond Milk + Egg, then dredged in Coconut Flour + Cornstarch + Smoked Paprika, Spritzed with olive oil 👉🏼Air fried at 400F for 10-12 minutes.

🥑Shredded Cabbage + Avo-crema (see reels) = Spicy Avo-Slaw

🍍Pineapple Salsa 👉🏼 Pineapple, Tomato, Red Bell Pepper, Jalapeno, Cilantro, Red Onion all diced + lime juice, salt, Tajin

What do you know, it's Taco Tuesday again!💃🏻🤣

Today, that means Sweet Potato Nachos!💚

Sweet Potato Toast Slices, topped with Taco Meat + Shredded Lettuce + Pico de Gallo + Pickled Onions + Fresh Cilantro.
You could add Avocado, Olives, Jalapenos, Avocado Crema or any of your favorite Nachos toppings!

🍠For the Sweet Potato Toast -
Peel your sweets and slice them thin, about 1/4" thick, spray them with olive oil dust them with Taco Seasoning and air fry for about 7 minutes per side, yep that's it!
*I use my Ninja Air Fryer Toaster oven

Grit Game is STRONG on these Dairy Free Creamy Spinach Grits...💚

THE GRITS
2 C Chicken Broth
1/2 C Marsh Hen Mill White Grits
1/2 t Salt
2 T Dairy Free Unsweetened Yogurt
1/2 t Everything but the Bagel Seasoning
5 oz Fresh Spinach or SuperGreens

Bring 2 cups broth/water to a boil. Add 1/2 cup Grits + 1/2 tsp salt.
Bring back to rapid bubble for 2-3 min, turn down to low heat & simmer for 18-20 minutes, stirring often.
Stir in 2 T Unsweetened Dairy Free Yogurt + 1/2 tsp Everything But the Bagel Seasoning, dash of pepper & 2 big handfuls of Spinach or Super Greens and stir to wilt.

Serve with Everything...🤣

🌶Smokey Cilantro Chicken Breast
🍅Pico de Gallo + Corn + Black Beans + 🧅🧅Pickled Onion
🫒Black Olives
💛Crunchy Chickpeas
🔥Pickled Jalapenos
🥬Over Lettuce, Cabbage, Carrot Blend
🥑Topped with Dairy Free Avo-Crema (see reels) & Fresh Cilantro

Would you believe me if I told you this took 20 minutes - Start to Finish?😆

Okay, the Pickled Onions I keep around, but it only takes about 5 minutes to whip up a batch of those and they last...💜

2 C broth/water
1/2 C grits (I like Marsh Hen Mill)
1/2 t salt
black pepper
Unsweetened Dairy Free Yogurt ( I use Forager)

4-5 eggs
1 lb. Flank Steak
1 package Frontera Taco Skillet Sauce

Sliced Heirloom Tomato
Pickled Onions (Find these in my Reels)
Fresh Basil

🍳Begin by getting the grits started. While you are waiting for your broth/water to boil, lightly spray a large skillet with olive oil spray and scramble your eggs. Remove eggs from the skillet and set aside.

🤍Add your grits to boiling broth and bring back to a rolling boil for about 2 mins. Turn down to low heat & simmer for 15 minutes, stirring often.

🥩Meanwhile, Slice your flank steak into bite sized pieces, using a sharp knife and add to same skillet you used for the eggs. Saute on medium high heat for about 7 minutes, turning to brown. Add package of Skillet Sauce, stir well to combine. Turn to low heat and simmer until grits are ready. Stir 1-2 T Unsweetened Dairy-Free Yogurt into Grits. Serve with pickled onion and sliced tomatoes.
Yield 3-4 servings.
