Golden Fork Worthy...🫶🏽

I love a good Steak Salad!

What does it for me - Juicy Steak, the perfect dressing and an on point crunch factor. This one has it all!

✨Crunchy Steak Salad w/ Dairy-Free Avocado Crema✨

✦Strip Steak seasoned with Hardcore Carnivore Charcoal Rub ( ) and grilled to medium rare, rest 10 minutes, slice
✦Dairy Free Avocado Crema (🔗 link in Bio)
✦2 T Pico de Gallo
✦2 T Sea Salt Crunchy Chickpeas (I used Saffron Road)
✦1-2 T Pepitas
✦Mixed Greens, roughly chopped
✦Shredded Red Cabbage
✦Shredded Carrots
✦Fresh Cilantro
✦Sea Salt & Fresh Cracked Black Pepper to dust...

10 min. Beef Bulgogi Wraps
6 hands up for seconds - what!!

New Family Favorite here!

If your kitchen has a revolving door like mine, this is easy peasy to batch cook between practices, etc. AND it's simple to modify for everyone!

Mix up the marinade and pop this in the fridge for 4+ hours or overnight. Cook a pot of rice.

When you're ready, scoop out a serving of meat, preheat your air fryer to 400F. Air fry for 10 mins.

I served these in butter lettuce cups with 1 T Jasmine Rice each & a drizzle of the reserved marinade, topped
with scallions, sesame seeds & red chili flake. Done!

You could pair with lettuce, rice, noodles, cauliflower rice, air fryer shredded cabbage, spaghetti squash, zucchini noodles - your choice!

~3 lbs. Strip Steak, sliced thin

Marinade
1/3 C Tamari or Soy Sauce
2/3 C Coconut Aminos
1 T sesame oil
2 T rice vinegar
4-5 cloves garlic, chopped
1 pear, sliced into thin strips (optional)
1 thumb sized piece of fresh ginger, minced or grated
1 T gochujang / korean chilis / red pepper flakes more or less depending on how spicy you like (I held back in marinade bc kids & added more when finishing for adults)

Reserve 2 T marinade for drizzle

Butterhead Lettuce (I used Gotham Greens)
Jasmine Rice (Optional)
Red pepper flakes
Sesame seeds
Scallions

The Taste of Summer!☀️🌱

I mixed up this Cucumber & Tomato Salad last night to pair up with Greek Seasoned Shaved Steak & Chicken + Quick Naan Bread + Tzatziki Sauce and ALL of it was a huge hit with my family. Grab the Naan Bread Recipe from , it's definitely a keeper!😉

Summer Salad
1 Cucumber, sliced & quartered
1 pint Colorful Cherry Tomatoes, quartered
1 can Artichokes Hearts in water, drained, rinsed, quartered
1/4 Red Onion, sliced thin
2 Tbsp Red Wine Vinegar
1 tsp Extra Virgin Olive Oil
1 Tbsp Fresh Basil, chopped
1 Tbsp Fresh Oregano
1 Tbsp Fresh Thyme
1/8 tsp Salt
1/8 tsp Pepper
(Feta Cheese - optional)

🥄Just mix and let chill before enjoying!

🔸Sticky Salmon Bowls🔸

Done in the time it takes to steam rice!

🔹3 Salmon filets, skin removed
🔹2T Tamari or Soy Sauce
🔹2T Coconut Aminos
🔹1 T Honey or Monk Fruit Sweetener
🔹1 t Toasted Sesame Oil
🔹1 T Rice Vinegar
🔹2 cloves Garlic, minced
🔹1 small knuckle Ginger, minced

1️⃣Whisk ingredients well to make marinade/sauce.
2️⃣Slice Salmon into bite sized cubes, add to a small bowl, toss with about 1/3 of the marinade mix, allow to soak for about 15 minutes.
3️⃣Preheat air fryer to 400F.
4️⃣Add salmon to air fryer and cook 5-6 minutes or until crispy & opaque.
5️⃣Meanwhile, add remaining marinade/sauce mixture to a small pan. On medium heat, cook to reduce sauce by about half.
6️⃣Serve Salmon over steamed Jasmine Rice, drizzled with sauce. Top with Sesame Seeds.
7️⃣Enjoy with your favorite Sushi ingredients
(Cucumber, Mango, Avocado, Scallions, Edamame, Jalapeno, Fresh Herbs)
