Broccoli and Almond Stir-Fry
Ingredients:
- 2 cups broccoli florets
- 1 red bell pepper, sliced
- 1 cup snap peas
- 1/4 cup almonds, sliced
- 2 tbsp coconut aminos or soy sauce
- 1 tbsp sesame oil
- 1 garlic clove, minced
- 1 tsp fresh ginger, grated
- Cooked quinoa or brown rice, for serving
Instructions:
1. Heat sesame oil in a large pan over medium heat. Add garlic and ginger, and sauté for a minute.
2. Add broccoli, red bell pepper, and snap peas. Stir-fry for 5-7 minutes, until vegetables are tender-crisp.
3. Add soy sauce and sliced almonds, and cook for another 2 minutes.
4. Serve over cooked quinoa or brown rice.
