Look at those faces. Some of them lied about their age to get into the service. They never made it to 18. Never voted. Never loved a woman, or had a family of their own.

They paid the ultimate price for our freedom. We live our lives the way we do because of them.

We should all be deeply grateful on this Memorial Day to those who made the ultimate sacrifice.

Thank you everyone for all your love and amazing support. After 10 months of a challenging recovery process, I will be returning to my practice in April. ZUCCHINI PASTA With
BEEF, TOMATO AND-MUSHROOM SAUCE.

Takes 25 Mins to prepare

Yield Serves 4

INGREDIENTS

2 medium zucchinies, spiralizer (makes 3-4 cups).

12 oz lean ground beef

2 Tablespoons extra-virgin olive oil

2 medium onions, diced

1 teaspoon sea salt

1/2 teaspoon freshly ground black pepper

3 cloves garlic, minced

8 ounces button mushrooms, sliced

3/4 cup chopped fresh herbs (such as parsley, and oregano)

1 28-ounce can diced tomatoes.

1 cup thinly sliced basil leaves

1/2 cup freshly grated Romano or Parmesan
(Optional)

DIRECTIONS

Step 1

Wash and dry the zucchini. Prepare zucchini noodles according to your spiralizer directions.
I prefer thin noodles in this recipe. You will need about 4-6 cups of noodles.
Set aside.

Step 2

Spray a large skillet with non stick cooking spray. Heat the pan to medium high. Cook ground meat until thoroughly browned, turning to insure even cooking .

Place cooked meat in a colinder. Thoroughly drain an rinse meat. Set aside.

Step 3.

Heat oil in a large skillet over medium heat.

Add the onions, ½ teaspoon of the salt, and ¼ teaspoon of the pepper and cook, sturring occasionally, until the onions are softened, about 8 minutes.

Step 4

Add the garlic and sliced mushrooms.
Continue to cook, covered. Add cooked meat.

Step 5

Stir in chopped herbs, and remaining salt and pepper, and cook for 4 minutes. Add diced tomatoes and basil and heat through.
Add the zucchini and toss thoroughly until sauce is well distributed.

Step 6

Transfer to plates, and sprinkle with the cheese. (Optional)
