Just had this.
One of my go to meals:
1/2 avocado , mashed
20-25 grams of protein: seitan
(not gluten free, so could put similar amount tofu in toaster oven to dry out, shred it and use that instead.
that's not soy free, so could use a cup of garabanzos, lightly mashed
ok ok. could use tuna fish too. )
1 tbsp chopped red onion
1/4 cup chopped celery
juice 1/2 lime.
mix the above together.
place 10 grape tomatoes cut in half upside down on top of 2 cups of salad greens (I love arugula, arugula and spinach combo is great too)
turn avocado mixture on top of the salad greens.
top with chopped scallion.
