🍵✨ Brighten up chilly days with this zestful Wild Garlic Soup from our Balkan Vegan cookbook! It’s the perfect blend of comfort and nourishment, with a lemony kick to finish. Ready to give it a try? Here’s how:
Ingredients:
1 large onion, chopped
Fresh turmeric & ginger, chopped
200g topinambur, peeled & chopped
100g carrots, peeled & chopped
200g wild garlic, washed & chopped
Fresh parsley, a generous handful
Salt, pepper & a pinch of nutmeg to taste
1.5L water
250g cooked lentils
100g your choice of pasta
Juice of 1 lemon (to finish)
How to:
Sauté onion until translucent.
Add turmeric & ginger; stir for a minute.
Toss in topinambur, carrots, wild garlic, & parsley. Season well.
Pour in water; bring to a boil, then simmer until veggies soften.
Blend topinambur and wild garlic until smooth, return to pot.
Add lentils and pasta; cook until pasta is tender.
Stir in the fresh lemon juice for a vibrant taste. Adjust seasonings, and add toasted bread cubes for that extra crunch!
