Happy Thanksgiving Pumpkin and Chickpea Soup

Soup ingredients:

Tsp of olive oil 

1/2onion

3 cloves of garlic

1/2 tsp of each - salt,pepper, cinnamon 

4 carrots

Puree pumpkin (800 ml)

2 cups of broth

1/2 can of coconut milk

Fresh spices: rosemary & thyme 

Roasted Chickpeas

Can of Chickpeas, rinsed/dried

Tsp of olive oil 

Salt,pepper, paprika, tsp of soya sauce 

Top with chickpeas and pumpkin seeds!
