These salted caramel coconut date balls are made with only four ingredients and are so easy to make. Grab a couple with a cup of tea for a great snack! They are also great as an energizer snack for an afternoon pick-me-up or pre-or post-workout snack.

These healthy Rainbow Veggie Mason Jar Salads are the ultimate vegan meal prep recipe. Made with layers of chickpeas, rainbow veggies, a creamy dressing, greens, and so many more goodies! Simple and easy to make, vegetarian + gluten-free, and so delicious!

Meal prep and planning are essential for eating healthy and not turning to convenient items during the week.

Maybe you've got kids at home and you're balancing your new job of a teacher. Or maybe you are still keeping up with your full-time job, and even though you're home, you don't have tons of time to prep a healthy lunch.
That's where this mason jar salad comes in. With this, you'll have a healthy, delicious lunch ready to go.

For this salad, we're keeping things light and fresh. Tons of raw veggies, chickpeas, spinach, and an amazingly creamy tahini dressing. It's so easy to make and it honestly makes the most incredible meal!

Ingredients:
For The Dressing
• 1/4 cup Tahini
• 1 Lemon juiced
• 1/4 tsp Garlic Powder
• 1/4 tsp Red Pepper Flakes
• 2 Tbsp Water or more
For Salad
• 1 cup Chickpeas
• 1 cup Red Bell Pepper chopped
• 1 cup Carrots sliced
• 1 cup Cucumbers sliced
• 1/2 cup Spinach
• 1/4 cup Quinoa cooked
• 1/2 cup Red Cabbage thinly sliced
• 1/4 cup Fresh Mint Leaves optional

These taste paleo banana pancakes are tasty, and only 3 ingredients! Yep, just three!

Ingredients:
-2 eggs; whisked
-2 ripe bananas; mashed
-1 cup almond butter (I like crunchy almond butter for this recipe)

Instructions:
-Preheat your oven to 225 F.
-Preheat your skillet over medium heat. You want the pan hot when you start cooking the pancakes.
-Mash your bananas and set them aside for a moment.
-In a medium sized mixing bowl mix whisk your 2 eggs. Add bananas and almond butter.
-Pour your batter into a hot skillet the size you want and let them cook. You will know they are ready to flip once the batter starts to bubble.
-flip your pancakes and let them finish cooking.
-Place your finished pancakes in the oven while you are cooking your other pancakes to keep them warm.

It’s been a crazy few weeks for Basic Eats. With Co-Founders going through job changes, and life… we had a few weeks with no new recipes. Well that is done and we ARE BACK. This new spiced chai granola was the first we had to share.

It’s hard to go back to store-bought granola after making it at home. Not only is it super easy to make, but you can control the ingredients and switch up the flavors. Plus, there are no funky additives!

· Nuts: I’m using a blend of almonds, pecans, and cashews. But feel free to use other nuts of your choice.
· Seeds: Sunflower seeds and pumpkin seeds are great for giving this granola a boost in vitamins and nutrients!
· Spices: You’ll need a mix of cinnamon, ground ginger, cardamom, and allspice.
· Sweetener & Flavors: Blackstrap molasses, honey, and vanilla extract act as the binding ingredient for all the nuts and seeds. But they also give this granola sweet touch!

· Make it a part of your breakfast routine. You can top this on yogurt bowls, smoothie bowls, cereal bowls, or even on top of fresh fruit!

Taco stuffed zucchini boats are a healthy, veggie-forward, Mexican-inspired meal. They’re light and fresh yet surprisingly filling. You’ll definitely go back for seconds on this recipe!

They’re a great way to enjoy your favorite authentic taco flavors, but wrapped up in a healthy, vegetable container – fresh zucchini! And while I’m using ground beef today, you could also use any of those previously mentioned meats. So have fun with the recipe!

INGREDIENTS:
You’re swapping tortillas for crisp zucchini (it’s super easy). But other than that, you can top these zucchini boats with your favorite taco toppings. Here’s what I used:
• Zucchini: try to grab large zucchini that are about the same size so you’ve got room for plenty of filling!
• Ground beef: I’m using 90% ground beef (which usually means I don’t have to drain fat from the pan), but you can use your favorite beef-to-fat percentage.
• Taco Seasoning: There’s no comparison when it comes to the homemade taco seasoning. Fresh is best!
• Taco Toppings: I’m using sour cream, diced tomatoes, sliced green onions, avocado, and cilantro.

Smoked salmon deviled eggs take a classic appetizer (deviled eggs) to a stunning new level. Filled with fresh herbs, salty smoked salmon and briny capers, each bite is loaded with palate-pleasing flavor.

WHAT’S IN THESE SMOKED SALMON DEVILED EGGS?

These little bites look impressive, but only require a few simple ingredients. Who doesn’t love that?

-Eggs: Half a dozen large eggs will do the trick.
-Mayonnaise & Dijon Mustard: The essentials needed to make that deliciously creamy filling.
-Shallot: The slight garlicky flavor of shallot adds a savory touch.
-Lemon Juice: Instead of vinegar or pickle juice, I’m using lemon juice for a bright, natural acidity.
-Dill: Fresh dill and salmon are the perfect combo!
-Smoked Salmon: Just grab a package of your favorite smoked salmon to keep this recipe easy peasy. I’m using wild Alaskan smoked salmon.
-Capers: A sprinkle of briny capers add to that layered flavor, and also beautifully dot the top of each egg!

This Kale And White Bean Salad recipe is easy to make and comes together in 10 minutes for a healthy vegan-friendly salad you’ll love.

Kale is a delicious ingredient to use in hearty salads like this Kale And White Bean Salad. But Kale is also known to be a tough and bitter green.

Luckily, there are a few key secrets to preparing kale to make it taste delicious in salads!

1. Wash well. Kale can have a lot of dirt stuck between those curly leaves, so wash the kale well before preparing it for salads.

2. Remove the stems and ribs from each leave. The kale stems and ribs can be tough and stalky, so cut them from the kale leaves for a more tender salad.

3. Massage the kale. This is the #1 secret to making the kale tender and less bitter. Add a pinch of salt to the kale and gently massage it with your hands.

INGREDIENTS:
Kale: there are a few different varieties of kale out there and all of them will work well in this recipe.

White beans: Any type of white beans work well too. White kidney beans, cannellini beans or even lima beans all would taste great.

Avocado: make sure to use a ripe avocado for this recipe.

Seeds: this salad uses a combination of pumpkin seeds, sunflower seeds, and h**p seeds. Using toasted seeds will give the salad even more flavor.
