VEGAN LASAGNA 🌱 (with a fresh raw broccoli salad!)

This recipe is creamy, hearty, and completely dairy-free + gluten-free. The trick? A dreamy cashew-tofu ricotta, protein-packed lentil tomato sauce, and layers of roast pumpkin, zucchini & mushrooms.

👩‍🍳 What you’ll need:

Red lentils + tomato basil sauce

Cashews (soaked overnight) + firm tofu

Nutritional yeast, lemon juice, garlic, herbs

Baby spinach + roast pumpkin, zucchini & mushrooms

GF lasagna noodles (or zucchini/eggplant slices)

Vegan mozzarella (optional)

✨ How it comes together:
1️⃣ Cook lentils, mix with sauce → simmer
2️⃣ Roast veggies till golden
3️⃣ Blend cashew-tofu ricotta (creamy but thick)
4️⃣ Layer sauce → noodles → ricotta → spinach → veggies (repeat!)
5️⃣ Bake covered, then top with vegan cheese & bake again

💡 Side dish: Raw broccoli salad with edamame, toasted almonds, cranberries & a tangy olive oil–ACV dressing.
