Slow-Cooked Beef with Fennel, Leeks and Cumin
Serves: 4
Ingredients:
480g beef shin or stewing steak, cubed
4 tsp olive oil
2 fennel bulbs, sliced
2 leeks, sliced
4 cloves garlic, chopped
2 tsp cumin
800ml bone broth or stock
4 tsp apple cider vinegar
Sea salt and black pepper
Fresh parsley
Method:
Heat oven to 150°C.
Brown beef in olive oil. Add garlic, fennel, leeks, and cumin. Cook for two to three minutes.
Add broth and vinegar, season lightly, bring to a simmer.
Cover and transfer to oven for 1½–2 hours until tender.
Finish with parsley and adjust seasoning.
