Most of my recipes start with:
“What do I have in the freezer… and what needs using up?”
This one was bone-in chicken breasts and a couple of Roma tomatoes.
I wanted basmati rice.
I didn’t want three pans.
So everything went into one pot and into the oven.
The result? Crispy skin, fluffy rice, and a dinner that got requested again immediately.
