This is by far my best homemade green dressing/sauce! š I usually donāt follow a formal recipe and may use my recipe as a guide when I havenāt made it in a while! I love the freshness of the herby flavours and simply add fresh green leaf herbs I have growing in the garden. The combo of Parsley, Chives and Basil is very nice but added Thyme, Mint and Rocket can also create some unique herbful flavours!
I also love making this dressing because itās the best way to use up any extra avo to be enjoyed in an unusual way.
The acidity of the vinegars and lemon juice keeps the vibrant green colour and the it doesnāt brown.
Here is my version of this yummy dressing for you to try yourself!š«
Green Goddess Dressing Ingredients:
ā¢1/2 tsp chopped fresh Parsleyā¢1 cup Baby spinachā¢1/2 Avo (optional)ā¢1/2 cup chopped fresh Chivesā¢1/4 cup chopped Basil (optional) ā¢1 Garlic cloveā¢3 Tbsp white wine Vinegarā¢1 Tbsp Apple cider Vinegarā¢3 Tbsp real, from a real lemon Lemon juiceā¢1/2 cup Olive oilā¢1/2 cup Greek yogurtā¢1/4 cup Mayoā¢1 tsp Dijon mustardā¢2 tsp of sugarā¢Salt and Pepper to taste In a blender, blend all ingredients together until smooth.
Adjust according to thickness and taste - adding more lemon juice or oil or seasoning.
