ROASTED CAULI & SWEET POTATOES WITH CHICKPEAS
Such a delicious combination of flavours! This is the kind of side dish that is so yummy, that you will want to make it again soon. The cinnamon, cumin and paprika are really good with the veggies and chickpeas. Both cauliflower and chickpeas have an extra nutty taste once roasted and the natural sweetness of sweet potatoes is even more pronounced when roasted. The chickpeas add PLANT-BASED PROTEIN to the dish, so you can even enjoy it as a light vegetarian meal. The yoghurt sauce, seasoned with herbs and a bit of ground cumin, is absolutely delicious.
