CHICKEN in a BARBECUE SAUCE


Here is a LOVELY HOMEMADE SAUCE that is delicious as a COOK-IN SAUCE for an oven dish full of chicken portions. The base of this sauce is the BARBECUE SAUCE from the BRAAI EDITION in the Cooking from the heart recipe book series.

PREPARE a FULL BATCH of the sauce and spoon out HALF for the chicken portions. (The other half is perfect for your weekend braai.)
ADD 125 ml (½ cup) Rooibos tea to the sauce.
BLEND sauce with a stick blender to form a smooth mixture.
PLACE chicken portions in an oven dish.
POUR the smooth sauce over the chicken and cover with foil.
ROAST at 200 °C for 20 minutes. Remove the foil and roast for another 20-25 minutes or until the chicken is cooked, but still juicy. Enjoy this with green veggies, spinach leaves and some cauli-rice for a delicious low-carb meal.

This whole Raisin Scone recipe by Isabella Niehuas is a warm, lemony treat for tea-time, with a HEARTY twist. Enjoy them round or sliced into wedges, and always after a DASH diet meal.

Ingredients
zest of one lemon
¼ cup sugar
½ tsp bicarbonate of soda
1½ tsp baking powder
1 tsp salt
2⅓ cups cake flour
⅓ cup raisins, pitted
125 g cold butter, coarsely grated
¾ – 1 cup buttermilk
extra light brown sugar for sprinkling

Method
Preheat oven to 200 °C and line a baking sheet with baking paper.
Add the lemon zest and sugar to a bowl and mix together. Add the bicarb, baking powder, salt and flour and stir well to mix.
Add the raisins and stir through.
Rub the butter into the flour mixture. Alternatively, cut in using a knife or pastry cutter.
Lastly add the buttermilk and mix until the dough comes together. Start with the smaller amount of buttermilk and gradually add more if necessary. The dough should not be too wet.
Sprinkle some extra flour on the work surface. Turn out the dough and gently pat into a circle about 4 cm thick.
Place on the lined baking sheet. Dip a butter knife in flour and cut the dough circle into 8 even-sized wedges. Brush with a little extra melted butter and sprinkle with a thin layer of light brown sugar.
Bake for 35-40 minutes or until golden and cooked through. Or bake individual round scones for 20 minutes. Enjoy with some butter and your favourite jam or just as is!

1 …, 2 …, 3 … CAULI-RICE!!


Make this easy SUPER TASTY cauliflower rice. Now there’s NO NEED to pay a lot of money for a shop-bought version! Cauliflower is a great example of a low-carb veggie so add this to your low-carb repertoire today.

✔️ COARSELY GRATE 300 g CAULIFLOWER (that’s about a head of cauliflower) and place in a saucepan with 125 ml (½ cup) WATER.
✔️ Bring to a BOIL, COVER and SIMMER for 5 minutes. REMOVE the lid.
✔️ Simmer for another 5-7 minutes until the water has evaporated and the cauliflower is cooked.
✔️ SEASON with 5 ml (1 tsp) FRESH THYME leaves or a large pinch of GROUND NUTMEG and black pepper to taste. Enjoy!

TIP: To make cauliflower mash, just blend the cauli-rice with a stick blender and add a splash of olive oil or milk to create a smoother end result. 😉
