World Kidney Day

The 12th March is known as World Kidney Day. The aim of this day is to raise the awareness of the increasing rate of kidney disease as well as to promote kidney health for everyone. Kidneys are two bean-shaped organs located on each side of the spine, just below the rib cage.

These organs are very important as they filter blood, removing waste and extra fluid from your body to produce urine. They are also responsible for removing acid that is produced by the cells in your body in order to maintain a healthy balance of salts, water and minerals in your blood. This balance is needed in order for your body’s tissues, nerves and muscles to work properly.

Quick and easy salad, try it, it is delicious!!

Want a quick and easy, tasty meal? Try out this delicious yet healthy recipe for 'Chicken-Walnut Salad with Blue Cheese Dressing'

Portions: 4
Prep Time: 30 minutes
CHD: 4.5 g per portion
kJ: 980 kJ

Ingredients

700 g: Chicken breasts, skinned and deboned
To taste: Salt, freshly ground black pepper, chicken spice
1 medium: Cucumber, halved and finely sliced
1: Tomato, chopped
1: Onion, finely chopped
To taste: Lettuce leaves, about 4 cups
30 ml: Finely chopped walnuts

Blue Cheese Dressing:

75 ml: Crumbed blue cheese
30 ml: Mayonnasie (Kraft ordinary)
75 ml: Cream
10 ml: Vinegar (white)
15 ml: Melted butter/canola oil

Method
1. Heat the grill element and put oven rack 20 cm from the element.
2. Season chicken breasts, put into a frying pan and grill for 5 minutes on each side u til the juices run clear when pricked with a fork.
3. Cut into cubes and leave to cool down.
4. Combine all the ingredients and serve with blue cheese dressing.

Blue Cheese Dressing:
1. Blend all ingredients in a blender for 30 seconds until pureed.
