In order for us as humans to absorb the nutrients in mushrooms they must be cooked at high temperatures to break down the chitin in cell walls.

Eating raw mushrooms has about the same nutritional value as eating cardboard, also it will make your tummy sore as we aren't able to digest chitin... so cook your mushrooms!
