Chickpea, biltong and balsamic salad

Serves 2

1 (400g) tin chickpeas, drained
120g lean biltong
Lettuce, torn
Cherry tomatoes, halved
Cucumber, sliced
30ml balsamic vinegar
15ml extra virgin olive oil
Salt, to taste
Pepper, to taste

Drain the chickpeas and rinse thoroughly under running water.
Wash the lettuce, tomatoes and cucumber in clean water before preparing it for the salad.
Mix the chickpeas, biltong, lettuce, tomatoes and cucumber in a salad bowl.
Mix the balsamic vinegar and oil and serve as a dressing with the salad.

Tip
Create a “salad jar” that can be taken to work for lunch. Invest in a good quality glass jar with a lid. Layer ingredients as follows: dressing, chickpeas, cucumber, tomatoes, lettuce and biltong. Simply turn out ingredients onto a plate at lunch time and enjoy a fresh salad that is not soggy.
