Fresh uncooked corn cut straight from the cob in a salad! Mmmmm! Adds a slight sweetness! Salad dressing for the kill: 1 tsp hot english mustard, 2 tsp mayo, 4 tsp olive oil, 0ne tbsp lemon juice, a squeeze of honey, himalayan salt...) Alternatively....put the fresh cut corn in tin foil. Add 2 tsp butter and salt and pepper and bake in oven or on braai for 10 min!!!! You're welcome!!!! 😉

Beautiful vegetable side! Chop potato or sweet potato into her small cubes. Top with crumbled feta, drizzle with olive oil and sprinkle sea salt. Cover with tin foil and bake in oven. In a separate pot, chop and fry a big pack of mushrooms in coconut oil and garlic with a teaspoon of butter. Add into the butterbut/potato mix. Serve with a chicken breast on a bed of marrow spaghetti. One of the tastiest vegetable sides you will ever taste!!!

Perfect health meal for perfect rainy weather! Cook boerewors in the oven and drain the fat. Cut into medallions. Using coconut oil, fry onions and garlic. Add diced butternut, a tin of butter beans, half a tin of tomato puree, green beans and sweet corn. A dash of steak sauce and seat salt. Throw into a slow cooker for a few hours or cook like a stew on low heat. Serve with cabbage fried in coconut oil and garlic or brown basmati. Boerewors and vege stew...get in my tum!

Ok...so I know I've been scarce...but who motivates the motivator when the motivator feels unmotivated...? (Me thinks you must try that sentence a few times over...fast!) .....so I'm out of my slump and feel ready to post some more! After all...Summer is on our door step. This next month my family is eating as clean and close to nature as we can (as we always should Really!) Here comes some motivation in dribbles! We can do this! 👊👊 ingredients listed in pics...
